Butterscotch Sauce
1/2 cup unsalted butter Dash salt
1 lb light brown sugar, packed 1 tsp vanilla
1 cup heavy cream
Melt butter and brown sugar together over low heat, stirring until butter is melted and sugar is dissolved, about 5-10 min. Stir in cream and salt; mix well. Transfer sauce to double boiler and cook over simmering water for 1 hour. Stir in vanilla. Makes 2 1/2 cups.
