Boil pork feet in a gallon of water until well done, 20-25 minutes. As foam rises to surface, skim it off to keep water clear. Heat the oil in a small skillet to very hot, remove from burner and place onions in the oil until they turn slightly yellow. Then pour this into soup. Add preserved cabbage and seasonings. Simmer for 30-45 minutes. Pour hot water over the banh canh to separate the noodles. Before serving, drop the noodles into the soup and cook 5-7 minutes. To serve: garnish with chopped onions, cilantro, and black pepper.
