Whole Fish or Fish Fillet 2 lbs
Soy Sauce 3 tablespoons
Wine 1 tablespoons
Salt 1 teaspoons.
Red Peppers (Shredded) 2
Green Peppers (Shredded) 2
Onion (Shredded)
Black Mushroom 4
Bamboo Shoots 1 small can
Carrot 2
Sugar 3 tablespoons
Vinegar 3 tablespoons
Water 1/2 cup
Cornstarch 1/2 tablespoon
Sesame Oil 1 teaspoon
Pepper 1/4 teaspoon
 
  1. Rinse fish and pat dry; marinate in wine, salt, and pepper briefy. Pour 1 1/2 oil over fish before baking.
  2. Preheat oven at 500 F, bake fish until cooked, about 20 minutes.
  3. Heat the skillet with 2 tablespoons oil at high heat, stir fry red pepper, green pepper, onion, black mushroom, bamboo shoot and carrot until fragrant. Add soy sauce, sugar, vinegar, water, cornstarch and sesame oil into the vegetable. Cook the vegetable until the sauce thickened. 
  4. Pour mixture over fish and serve.

Szechuan Peppercorn 1 teaspoon
 
  1. Rinse fish and pat dry, marinate in wine, salt and pepper briefy. Pour 1 1/2 oil over the fish.
  2. Preheat oven at 500 F, bake fish for 20 mins or until cook.
  3. Pour lemon juice and Szechuan peppercorn over the fish and serve.

Ginger (Finely Chopped) 1/2 teaspoon
Garlic (Finely Chopped) 1/2 tablespoon
Green Onion (Finely Chopped) 3-4
Hot Bean Paste 1 tablespoon
Ketchup 3 tablespoons
Salt 1/2 teaspoon
Wine 1 tablespoon
Sugar 1 tablespoon
Sesame Oil 1/2 tablespoon
Cornstarch 1/2 tablespoon
Water or Chicken broth 3/4 cup
 
  1. Rinse fish and pat dry, combine wine, salt and pepper with the fish and marinate for 15 mins.
  2. Preheat over at 500 F at bake, bake fish until cooked, 15-20 mins.
  3. Heat the wok with 3 tablespoons oil at high heat, stir fry green onion, garlic, ginger, hot bean paste until fragant. Add ketchup, salt, wine, sugar, seesame oil.
  4. Add cornstarch into the chicken broth, mix well, pour into the vegetable in the wok, stirring quickly, remove from the heat.
  5. Pour over the fish and serve.

Green Onion (Finely Chopped) 2-3
Hot Chili Pepper (Sliced) 1
 
  1. Preheat oven at 500 F,  bake fish for 15-20 mins or until cooked. 
  2. Mix sesame oil, sugar, garlic, ginger, green onion, soy sauce, black vinegar and hot chile pepper slices, pour over the fish and serve.

Garlic (Finely chopped) 5 cloves
Black Bean (Finely Chopped) 4 tablespoon
Sugar  1 tablespoon
 
  1. Rinse fish and pat dry, marinated with salt, wine, soy sauce and sugar. 
  2. Mix black bean, ginger and garlic, pour over the fish.
  3. Heat water with a steamer(or wok), steam fish for 10-15 mins and serve.

Cornstarch 2 tablespoons
Egg  1
Corn 1 can
 
  1. Rinse fish and pat dry. Combine fish fillet with salt and sugar.
  2. Mix egg and cornstarch, fish fillet dip into the mixture and deep fry until golden brown.
  3. Heat the corn in a sauce pan. Pour over the deep fry fish fillet and serve.
