Gingerbread

2 cups flour 1/2 cup sugar 1 tsp. cinnamon 1 tsp. allspice 1 tsp. ginger 1/4 tsp. salt 3 eggs 1 cup hot water 2 tsp. baking soda

Measure first (8) ingredients into mixing bowl. Measure hot water. Add baking soda, holding over bowl to catch it as it foams up.

Add and beat until mixed well.

Pour into greased pan (9x13). Bake at 350 degrees for 35 - 40 minutes or until toothpick comes out clean.

Serve warm with whipped cream.

Chantilly Whipped Cream:

To one cup of whipped cream add - Orange: 1 tbsp. (15 mL) frozen concentrated orange juice.

Whip sugar and flavoring and any additions, except fresh fruit, with cream until thick. Fruit should be folded in last. Toasted, slivered almonds may be added, about 1/4 cup (50mL).
