2 cups of sifted potato flour
2 teaspoons salt
1 cup butter
1 cup powdered sugar
1 teaspoon almond extract
2 egg yolks beaten
1 teaspoon water

Mix flour and salt.
Cream butter until soft; beat in powdered sugar; add almond extract and egg yolks. Gradually stir in flour mixture (dough is very soft); chill.
Pack dough into cookie press (disks can include wreath shapes, stars, crescents) pressing shapes on ungreased baking sheet.
Bake in a hot oven (400 degrees F.) about 8 minutes, or until just delicately browned.
Approximate yield: 5 dozen cookies.
