Sticky date pudding, Dumplings and cocky's joy, Fruit bread and butter pudding,Chocolate self-saucing pudding.



1 cup dates(pitted and chopped),1tsp bi-carb soda,1 cup boiling water,2tbsp butter,1 cup soft brown sugar,2 eggs,1 1/2 cups self raising flour(sifted)

Toffee sauce

1 cup soft brown sugar,3/4 cup light whipping cream,1/2tsp vanilla essence,2tbsp butter


Mix dates and bi-carb soda in a saucepan,pour boiling water over the top and leave to stand.In a mixing bowl, cream butter and sugar together,until light and fluffy and pale in colour.Then add the eggs,one at a time(beating well after each addition).Gently fold in the sifted flour,stir in the date mixture and pour into a lightly greased 18cm(7")square or round cake tin.Bake in a preheated oven at 180c(350f) for 30-40 minutes.

(Insert a toothpick to check if done,it should come out clean)

Combine sugar,cream,vanilla essence and butter in a saucepan,bring to the boil,stirring and simmer for 5 minutes(set aside till ready to serve,this needs to be reheated,just before serving).Cut pudding into squares and place each square in the centre of a warm plate(I use a dinner plate or entree size plate).Pour hot toffee sauce over each serving and serve with cream or ice cream...serves6


(Caramel sauce)

Dumplings and caramel sauce


1 1/2 cups self raising flour,2tbsp castor sugar,60g(4tbsp)butter(melted),1 egg(lightly beaten),1/4 cup milk,1 1/3 cups water,1/3 cup golden syrup(treacle),1/2 cup soft brown sugar,1/2tsp lemon juice,60g butter(extra).


Sift flour into a mixing bowl,add sugar and stir until combined.Make a well in the centre.Combine butter,egg and milk and add to the dry ingredients.Using a knife,stir until just combined.Mix together,water,syrup,juice and extra butter in a large saucepan,stir over high heat until sugar has dissolved,(bring to the boil).Carefully drop heaped tablespoons of the dumpling mix into the sauce.Reduce heat to low,cover and cook for 10 minutes(or till the dumplings have risen and cooked through).Ladle the syrup over the dumplings occasionally during cooking...serves4

(whipped cream and or ice cream go really well with this pudding)



bread and butter pudding


1 1/2 cups of full cream milk,300g fresh or frozen fruit(berries),2tbs butter,8 slices bread,2tbs brown sugar,2 large eggs,1/2tsp vanilla essence,nutmeg,1tsp icing sugar.


Preheat oven to 220c(425f),heat milk gently in a saucepan(DON'T LET IT BOIL),if usinf frozen fruit, let it thaw out a bit.

Grease 4 individual ramkins with a little butter,remove the crusts from the bread,spread the remaining butter over the slices and cut each into 4 triangles,arrange a few pieces of bread in the bottom of the ramkins,add a spoonful of fruit and sprinkle with a little brown sugar,repeat the layering, finishing with a layer of bread.

Break the eggs in a bowl and whisk lightly, then stir in the warm milk and vanilla,whisk again and then carefully pour the mixture evenly over the bread,dust with nutmeg,place ramkins on a baking tray and bake for 15 minutes, or until just set and golden brown,sift icing sugar over the top and serve with cream or ice cream...makes 4


chocolate self saucing pudding


1 cup self raising flour,2tbs cocoa, 30g(1oz) butter,1/2 cup milk,3/4 cup sugar,1tsp vanilla essence,3/4 cup brown sugar,1/4 cup cocoa,1 3/4 cups hot water,1/2tsp salt.


Sift flour,salt and cocoa,add sugar,mix well,stir in milk,vanilla and melted butter,mix until smooth.

Spread evenly into greased oven proof dish.

Combine brown sugar,and sifted cocoa, sprinkle over top of pudding,pour hot water carefully over the top ,bake in a moderate oven for 50-60 minutes
