I want to use this space to tell all you great cooks and not so great cooks!! about Mimi's Cyber Kitchen! It is amazing! I have put links to a lot of cooking sites on my recipe page and they are all great but Mimi's is like visiting your best friend for an afternoon tea! Every one is so helpful and eager to find that "elusive recipe",no matter what it takes. Mimi personally answers any questions you may have. All you have to do is e-mail her. It is not a "form" E-MAIL where no one knows you from all the other thousands of requests. The best part is you can register and become a member and it's all free! Fish an' Brewis

6 cakes Purity hard bread
1 lb salt fish
1/2 lb fat back pork
2 onions

Soak hard bread in warm water for 1-1/2 hours. Boil fish until cooked. Cut pork into 1/4 inch cubes; fry until golden brown. Dice onions. Remove bones from fish. Add to strained soaked bread; mash together. Combine onions, pork, fish and hard bread. Warm and eat.

This is an old newfie recipe. We grew up eating this and it is now a culture dish.Fer you mainlanders,you can find da 'ard bread in a newfie specialty shop. Don't be 'fraid by's, try it!

Fried Cod Tongues

1 1/2 cups flour
1 tsp. salt
1/2 tsp pepper
7-8 cod tongues per person
1/2 lb. salt pork

Carefully wash cod tongues and dry in a paper towel. Mix together flour,salt and pepper in a plastic bag. Shake tongues in the mixture until evenly coated. Fry salt pork until golden brown. Remove pork cubes and fry tongues in same pan. Cook until golden brown on both sides. Serve with mashed potatoes and green peas.

Were do ya get cod tongues ya ask? From a cod fish of course!

*Everybody knows dat we 'ad cold winters in Nfld* but not as cold as dey used ta be!As a young girl I remember walking to school one "marning",an' it was so cold dat da smoke from da chimneys went straight up an' broke off! I've been known to tell da truth sometimes! *HarHar*

Fish cakes

2 lbs. fresh or salt cod fish (boiled)
8 med. potatoes, boiled and mashed
1 med diced onion
1/4 cup flour
1/4 pkg savoury
Small piece of salt pork

Cut pork into small pieces and fry until brown. Remove pork cubes,leaving fat in pan to fry cakes in. Mix fish,potatoes,onion and savoury together. Shape into cakes and coat with flour.(I MAKE THESE THE SAME SIZE AS A HAMBURGER PATTY) Fry on both sides until golden brown.

BBQ'D Caribou Ribs

3 lbs. caribou ribs, cut in pieces
1 cup catsup
2 tbsp vinegar
2 tbsp brown sugar
1 tsp salt
1/4 lb salt pork,diced
1 tbsp prepared mustard
2 tbsp lemon juice
1 onion
1/4 tsp pepper

Brown ribs in salt pork. Place in casserole and cover with bbq sauce. Bake at 325 degrees for 2 1/2 hrs. Baste sauce over ribs frequently. Delicious served with rice.

Fer all ya 'igh fluttin' mainlanders, you can use beef ribs.*GIGGLE* Game was a mainstay in our diet while we were growing up in Nfld. Money was scarce and game was plenty. Me mom could make a meal out of just about anything. Many cold days walking home from school, we would find baked potatoes for lunch! Boy, were they good! The skins were all crispy and crunchy and we ate them as if they were a gourmet meal! AHHHHHHHHH........ the good old days! Give that to the kids nowadays and I don't have to tell you what they'd say!!!

Bangbelly
A Traditional Christmas Eve Dish

3 cups cooked rice
1 cup flour
1 cup molasses
2 cups raisins
1 1/4 cups salt pork(cubed)
1 1/2 tsps baking soda
1 tsp baking powder
1 tsp cinnamon
1/2tsp all spice
1/4 tsp cloves
1/4 tsp mixed spice

Allow rice to cool and add salt pork and molasses. Sift together flour and spices. Add raisins,mixing all ingredients together. Pour into 9x9 greased pans. Bake for 1 1/4 hrs in a 350 degree oven.

Salmon Roll With Egg Sauce

2 cups flour
4 tbsps baking powder
1/2 tsp salt
1 egg
1/2 cup milk
4 tbsps shortening
1 large tin salmon
4 tbsps milk
2 tbsps lemon juice
1 1/2 tbsps chopped parsley
1/2 tsp salt

Sift together flour,baking powder,salt and add shortening.Mix well with fork. Beat egg slightly and add milk to make 3/4 cup. add to first mixture. Roll out on floured board to size of 8 inches long by 1/4 inch thick. Mix rest of ingredients and spread evenly on dough. Roll as for jelly roll and place on a greased baking sheet. Bake in 400-425 degree oven for 30 minutes.

EGG SAUCE

Make 2 cups of white sauce and add 2 chopped hard boiled eggs and 2 tsps finely chopped parsley. Mix and serve over hot salmon roll.

NEWFOUNDLAND LOBSTER SALAD

3 freshly boiled lobsters (shelled)
1/2 cup mayonnaise
1 small minced onion
3 hard boiled eggs,chopped
1/2 cup chopped sweet pickles
1/2 tsp salt
pinch of pepper

Cut lobster into bite size pieces and toss with above ingredients. Serve on lettuce leaves.

NFLD PORK BUNS

3 cups flour
5 tsps baking powder
1/2 lb. salt pork, cut into small pieces
1/2 cup shortening
1 cup cold water
1 1/2 cups raisins

Mix in order given. Form into small rolls and place in baking dish. Bake at 375 degrees until golden brown.

NFLD. EGG NOG

1 bottle newfie screech(rum)
1 quart fresh milk
1 tin evaporated milk
6 eggs
1/2 cup white sugar

Separate eggs and beat yolks with 1/4 cup sugar and whites with the other 1/4 cup of sugar. In a large container pour 1 bottle of newfie screech, 1 quart of milk, 1 tin of evaporated milk and egg yolk mixture. Beat for about 2 mins then top with egg whites. Sprinkle with nutmeg.

BLUEBERRY WINE

2 quarts blueberries
4 quarts boiling water
6 cups sugar
3 cups prunes

Add boiling water to berries and crush. Bring to boil and cook 10 mins. Strain juice and add 6 cups of sugar to 1 gallon juice. Cool to lukewarm,add prunes and 1 pkg yeast. Cover with cloth and let stand in a warm place for 2 months.Strain, bottle and cork.

'Dis is not a newfie recipe but since I moved to da "mainlan' I've found many good recipes. 'Dese are a just a few I would like ta share with you all. I 'ope to be adding a new one every other day.

This has got to be the best Hamburger soup recipe around!

HAMBURGER SOUP

1 lb. ground beef
1/2 cup chopped onion
1/2 cup chopped celery
2 (10 oz.) cans tomato soup
1 (10 oz.) can cream of mushroom soup
2 cups water
1 tsp. instant beef bouillon
2 cups grated carrots
1/2 to 1 tsp. marjoram leaves, crushed
1/8 to 1/4 tsp. hot pepper sauce
In a large dutch oven over medium heat, brown beef, onion, celery; drain. Stir in remaning ingredients. Cover; simmer over low heat 5-10- mins or until carrots are tender and soup is thoroughly heated. I usually do it for a little longer. I like it better.
This is so delicious!!!

CURRIED CHICKEN
ABSOLUTELY DELICIOUS!!

3/4 cup white sugar
1 tsp. dry mustard
1 tsp. paprika
1/2 tsp.garlic powder
3/4 tsp. curry powder
1/4 cup ketchup
4 to 5 pieces chicken
Mix all ingredients together and bring to a boil. Spread over chicken. Bake 2 hrs.in 325 degree oven.

*ALWAYS BE PREPARED;*
*IT WASN'T RAINING WHEN NOAH BUILT THE ARK!*

CHICKEN DIVAN

1head broccoli
1 cup cooked chicken
2 cups cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1 cup croutons
1 cup grated cheddar cheese
1/4 tsp. curry powder

Line bottom of 9x13 pan with chopped broccoli. Cover with chicken. Mix soup, mayonnaise, curry powder, and lemon juice. Spread over chicken. Cover with croutons and grated cheese. Bake at 350 F for 45 mins. YUMMY!!
