I just cube and slightly dry some bread (stick it in a slow oven for 20 min, stir and 10 min more) then mix up several eggs, sugar, a dash of salt, maple syrup or vanilla, and some Dari-free (like extra flavorful french toast mix).
Cf butter a loaf pan or casserole dish put in bread crumbs and pour mix over just to cover and bake at 325 for 45 min. I don't measure, but it's not hard to guestimate based on your kids sweet requirements.
If your child can have raisins you can sprinkle a few in - kind of layered in the bread crumbs also.
This is very good warm, but if you refrige over night you can slice it into
slightly messy finger food.
