Crispy Cookies with Poha Or Quinoa Flakes

1/2 cup honey
1/3 cup any dry sugar sweetener
1/2 cup (1 stick) dairy-free margarine
1/2 cup nut butter
1/2 tsp. GF vanilla
1 cup white rice flour
3/4 cup Poha (OR 3/4 cup quinoa flakes)
1 tsp. baking soda
1/4 tsp. salt (optional)
1/2 cup nuts or raisins or minced dried fruit (optional)

Preheat oven to 350°F. Beat Honey, sugar, margarine, nut butter, & vanilla until creamy. In large bowl mix rice flour, poha or quinoa flakes, baking soda, & salt. Add to mixture & beat until well blended, add nuts or fruit. Drop by rounded teaspoon onto cookie sheet. Bake 12-15 min. Makes 3 dozen cookies.
