Banana bread or Pumpkin bread


1 cup soy flour
1/2 cup potato starch flour
1/4 cup rice flour (can substitute potato starch flour)
3/4 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp xanthan gum
1/2 tsp salt
1/2 cup shortening
2/3 cup honey
2 eggs well beaten
1/2 cup mashed banana or 2/3 - 3/4 cup pumpkin

optional: 1/2 cup chopped nuts

Sift dry ingredients together. Set aside. Cream shortening and honey beating until light and fluffy. Add the well beaten eggs. Beat well. Add the dry ingredients alternately with the mashed banana or pumpkin, beating after each addition until smooth. Stir in the nuts and pour into well-greased 8" x 4" loaf pan and bake for 1 hour at 350 degrees. ______________________________________________________________________
