chicken or fish nuggets - recipe 1


GF flour mix
(6 parts rice, 2 parts potato, 1 part tapioca)
paprika
salt
white pepper
garlic powder

clean up chicken breasts and cut into cubes. Dip in beaten egg (I don't add milk sub only cause my kid won't drink it so I never have it on hand, but if you do, you can add it to the egg) then dredge in flour. Three choices to cook (in varying degrees of bad fats) are fry in Crisco in a deep fryer. Fry in canola or saffllower (or whatever you use) in a frying pan or cook on a earthen baking square in the oven.
