WELCOME TO MY ST. PATRICK'S DAY CELEBRATION

March 17 was a special day when I was growing up. I had to wear GREEN!! If I didn't, I got my toes stomped!! What a way to celebrate! I don't know if the kids still do that, but, one thing you can say, I never forgot my Green! I think I celebrate a little better today. I love Irish food and always prepare *special* foods for that day. I have listed below some of my selections and hope you will enjoy.

We will start with St. Pat's Day Punch.

2 c. sugar
2 pkg. lemon-lime Kool-Aid
1 6-oz. can frozen orange juice
1 pt. pineapple juice
1 qt. pineapple sherbet
1 lge. bottle ginger ale

Heat sugar, Kool-Aid and 2 cups water until sugar is dissolved. Add orange juice, pineapple juice and enough water and ice to make 1 gallon. Place sherbet in punch bowl. Add punch; add ginger ale. May freeze 1 additional package Kool-Aid and 2 quarts water in mold. Place in punch. Yield: 1 gallon.

Now how about a Quick Irish Stew.

1 bouillon cube
1/2 tsp. salt
8 sm. potatoes, peeled
6 med. carrots, split lengthwise
8 sm. onions, peeled
1 med. cabbage, quartered
1 12-oz. can corned beef, cut up
1/4 c. butter, melted
Parsley
1/2 c. mayonnaise
2 tbsp. mustard
1 tsp. prepared horseradish sauce

Bring 1/2 inch water to a boil in heavy skillet or covered pan; add bouillon cube, salt and vegetables, cooking until done. Place corned beef over vegetables; cook for 10 to 15 minutes or till meat is heated. Pour butter over corned beef; sprinkle with parsely. Combine mayonnaise, mustard and horseradish sauce; serve with corned beef mixture.

Havn't had enough corned beef yet? How about a delicious Corned Beef Salad.

3 c. V-8 juice
2 3-oz. pkg. lemon Jell-O
2 12-oz. cans corned beef, broken up
2 c. salad dressing
4 c. diced hard-cooked eggs
3 c. celery, chopped fine
4 tbsp. chopped green or sweet peppers
1 tbsp. finely chopped onion

Heat V-8 juice and 1 cup water to boiling point; dissolve Jell-O. Chill until partially thickened. Combine corned beef and salad dressing; fold into Jell-O mixture. Add eggs, celery, green peppers and oinon; pour into 9 X 13-inch Pyrex pan. Chill overnight or until firm. Yield: 15 servings.

You've had enough Corned Beef? Well, how about a Shamrock Salad?

3 green peppers
1 c. cottage cheese
1/4 c. chopped stuffed olives
1/4 c. chopped nuts
6 pineapple rings
Shredded lettuce or cabbage
French dressing

Cut stem ends from green peppers, remove seeds and membranes. Combine cottage cheese, olives and nuts; stuff green peppers with mixture. Wrap in waxed paper or plastic wrap; chill in refrigerator. Slice; place on pineapple rings arranged on shredded lettuce. Serve with dressing. Yield: 6 servings.

Okay, I think we are ready for a treat! Don't you? How about some Blarney Stones to eat?

1 cupcake recipe, or store bought if you like.
2 egg whites
1 1/2c. sugar
1 1/2tsp. light corn syrup or 1/4 tsp. cream of tartar
1/3 c. cold water
Dash of salt
1 tsp. vanilla
Green food coloring
Flaked coconut to taste
1 tbsp. water

Prepare and bake cupcakes according to directions. Cool. Combine next 5 ingredients in top of double boiler. Beat for 1 minute with electric mixer or rotary beater. Place over boiling water; beat constantly until frosting forms peaks or for about 7 minutes. Do not overcook. Remove from boiling water. Pour into mixing bowl. Add vanilla and several drops of food coloring, if tinted frosting is desired. Beat until of spreading consistency. Frost cupcakes. Place coconut in jar. Add food coloring to water until desired color is achieved. Add water to coconut; cap jar. Shake until uniformly tinted. Drain coconut on paper towel. Sprinkle over frosting.
