"ZUCCHINI JAM" (FROM JELLO)

PEEL ZUCCHINI FIRST
BLEND 4 CUPS ZUCCHINI
1 CUP CRUSHED PINAPPLE
BOIL 10 MINUTES.
ADD: 5 CUPS SUGAR
1/4 CUP LEMON JUICE
BOIL 10 MIN MORE
TAKE OFF HEAT. ADD 2 SMALL, OR 1 LARGE BOX OF JELLO - ANY FLAVOR. TASTES EXECTLY LIKE THE FLAVOR OF THE JELLO

"Green Tomato Jam"

4 cups green tomatoes (Peeled)
3 cups sugar
Mix and cook for 15 minutes (boil, then reduce heat)
Cool 2-3 minutes
Add 1 large box of jello (raspberry or strawberry)
Keep in refrigerator or freeze

"Apple Ring Pickles "NOT'"

2 gallons large ripe cukes, peeled and seeded (cut in rings or chunks)
Soak 24 hours in lime water, 2 cups lime about 8 1/2 cups water or to cover
Drain and rinse well, cover with COLD water for 3 hours
Drain and combine
1 cup vinegar
1 tsp alum
1 small bottle red food coloring
Pour over rings
Add enough water to cover
Simmer 2 hours, drain off, and add new syrup:
6 cups vinegar
8 sticks cinnamon
6 cups water
1 pkg.red hots
10 cups sugar
candy
Bring to boil and pour over rings. (Boil till candy dissolved)
Let stand overnight
Drain and reheat syrup for 3 days
Seal on last day. Pretty for Christmas etc.

"DIABETIC FRUIT BAR"

1/2 cup dates ( cut up )
1 cup flour
1/2 cup prunes ( cut up )
1 tsp.Baking soda
1/2 cup raisins
1/4 tsp salt
1 cup water
2 eggs 1 stick oleo
1 tsp. vanilla
1/2 cup walnuts(chopped)
Boil together dates, prunes and raisins and 1 cup water.
Add oleo to fruit mixture and let cool. When cool add beaten eggs and vanilla.
Sift flour, soda and salt then add walnuts.
Mix flour mixture with fruit mixture.
When cooled refrigerate.
Keep in refrigerator when not   eating

"FINNISH BISCUIT"

Combine 2 cups scalded milk, 1 cup sugar, 1 1/2 tsp salt and 1 stick oleo.
Let cool until luke warm.
7 cups flour
8 Cardamom seed Crushed ( Put in small piece of cloth or zip lock freezer bag and hammer them.
Dissolve 2 pkg. dry yeast in 1/2 cup of luke warm water
Add beaten eggs ,yeast mixture to 1st mixture,
Work in the flour then kneed the dough.
Can make into rolls or braid biscuit or both.
Braid make 3 balls of dough about size of a baseball,
Roll into long strips ,pinch the three together at the top and then braid
Place on lightly greased pan
Cover with cloth til rises at least double in size.
Bake in 350 degree oven 20 to 25 minutes.
When remove from oven brush over biscuit top   with a mixture of 3 tsp coffee with 4 or 5 tsp of sugar.
Slice 1/4 thickness.
Eat plain, with jam or jellies or just butter
IF you want rolls roll out into 1 inch wide,brush with melted butter and put on sugar and cinnamon mixture, roll strips and place in pan touching .let rise bake the same as braid.
You can also add raisins to dough. and can frost when done.

"RASBERRY JELLO DESSERT"

I make this every Thanksgiving and Christmas, It is very festive and goes well with all the traditional holiday dishes.
2-3oz.pkgs.Raspberry Jello
2 cups boiling water, Dissolve well
add 1 lg.can crushed pineapple,(drained)
1 can blueberry pie filling
stir well & chill overnight

~ Topping ~

8 oz. cream cheese
8 oz. sour cream
1/2 cup sugar
Beat with mixer until sugar is dissolved
Spread on top of Jello
Chill and serve
