Crepes

Ingredients


1 large egg
1 egg yolk
4 oz (115g) plain flour
2 tablespoons (2 x 15ml) (1 fl.oz) of melted butter
salt
1 teaspoon of sugar
4 tablespoon (4 x15ml) (2 fl.oz) milk
4 tablespoon (4 x15ml) (2 fl.oz) water

  1. Sieve flour into a bowl. Make a well in the centre with the back of a spoon.
  2. Break egg into well and mix, add sugar, yolk and pinch of salt.
  3. Whisk and slowly add in the milk and water. Gradually mix in the flour from the sides, and whisk into a smooth batter. Leave to stand for min 3 hours (overnight is best)
  4. Stir batter before use, it should be a watery texture, add 2/3 tablespoons of water if needed.
  5. Heat a small frying plan and add enough butter to lightly cover the surface. Pour a large tablespoon of batter into the pan and swirl to evenly spread mixture.
  6. Cook on moderate heat for 1 minute, shake pan to avoid sticking. Turn over and cook on other side for 1 minute. Turn onto hot plate and cover to keep warm, repeat until mixture is finished
