Ingredients
1 large egg
1 egg yolk
4 oz (115g) plain flour
2 tablespoons (2 x 15ml) (1 fl.oz) of melted butter
salt
1 teaspoon of sugar
4 tablespoon (4 x15ml) (2 fl.oz) milk
4 tablespoon (4 x15ml) (2 fl.oz) water
- Sieve flour into a bowl. Make a well in the centre with the back of a spoon.
- Break egg into well and mix, add sugar, yolk and pinch of salt.
- Whisk and slowly add in the milk and water. Gradually mix in the flour from the sides, and whisk into a smooth batter. Leave to stand for min 3 hours (overnight is best)
- Stir batter before use, it should be a watery texture, add 2/3 tablespoons of water if needed.
- Heat a small frying plan and add enough butter to lightly cover the surface. Pour a large tablespoon of batter into the pan and swirl to evenly spread mixture.
- Cook on moderate heat for 1 minute, shake pan to avoid sticking. Turn over and cook on other side for 1 minute. Turn onto hot plate and cover to keep warm, repeat until mixture is finished
