Ingredients:
2C cooked chopped chicken 
1  can cream of chicken soup 
1C diced celery 
1/2C mayonnaise 
1/4C diced onion 
1t   lemon juice 
1    12 oz box or bag of egg noodles 
     pepper and salt to taste 
2C   mozzarella cheese grated 
Directions: Combine all of the above ingredients with the cooked egg noodles. Spray casserole dish with pam. Pour ingredient into the casserole dish. Spread the 2 cups of mozzarella cheese over the top of casserole. Top with crumbled potato chips. Bake in oven for 20 - 25 minutes til heated through. Bake at 425 degrees. 


MISTY'S CHOCOLATE ECLAIR CAKE

Ingredients:
2 pkgs. French Vanilla Instant pudding mix 
1 12 oz. tub of Kool Whip 
2C milk 
Beat Together. 
Icing: Beat all the following ingredients together. 
1/2 Box Confectioners Sugar 
1/4C cocoa 
1/2 stick margerine 
3 oz. cream cheese 
1/4C milk 
Crust: Box of graham crackers...used for layering crust. Alternate layers from bottom up as follows: Graham crackers, filling, graham crackers, etc. Top with icing. Refrigerate and chill till ready to serve. 


LASAGNA

Ingredients:
3 lbs. ground beef 
1 can tomato paste 
2 quarts or 2 large cans of tomatoes 
2 cans tomato sauce 
1 large box lasagna (pasta) 
2 Tablespoons Italian seasoning 
2 Tablespoons minced garlic 
2 Tablespoons Tyhme 
2 Tablespoons oregano 
2 1/2 (8 oz) packages grated mozzarella cheese 
3/4 cup parmesan cheese 
1 pint ricotta cheese 
1 teaspoon salt 
1 teaspoon pepper 
1 Cup diced finely onion 
Directions: In large pot (5 quart) mix together tomatoes, tomato sauce and paste. Add all of th spices together into mixture. Borwn and drain hamburger meat and onions. Pour hamburger meat and onion into tomato mixture and let simmer for 2 to 3 hours. If you use a crock pot you can let it simmer for longer. Take a large casserole dish and layer the noodles. Put layer of sauce first, then layer of pasta, layer of sauce,layer of ricotta cheese,layer of mozzarella cheese, sprinkle parmesan cheese. Repeat the layering process starting with the noodles and finishing up with meat and cheese on the top. Bake in oven for about 50 minutes, uncovered; at 350 degrees. Serves 18. 
Note: Follow the directions on the back of lasagna for cooking pasta. 


MOM BURGESS' CHOCOLATE PUDDING

Ingredients:
1 1/2 C sugar
2/3 C Hersey's Cocoa 
3T Flour or cornstarch 
1 can evaporated milk 
1 can water 
2 eggs slightly beaten 
1tsp vanilla extract 
Directions: Combine all of the above ingredients into a sauce pan an cook stirring constantly until pudding mixture thickens...This is an old family recipe.


GRANNY ANNIE'S GREEN PUNCH

Ingredients:
2 cups sugar
2 Kool Aide packages - Lemon Lime
1 can frozen concentrate orange juice - thawed
  (regular size)
1  42-ounce can orange juice
1/2 can Pineapple Juice (22 oz)
1 cup Lemon Juice
Directions:
Mix to dissove sugar ( add water to fill gallon jug)  Milk Jugs work great for containers !


GRANNY ANNIE'S PINEAPPLE CAKE

Ingredients:
1  Duncan Hines Yellow Moist Deluxe Cake Mix...
   divide into 3 layers.
Icing...Ingredients:
1 1/2 C sugar
5 T Conrstarch
Pinch of salt
2 Cups milk
1 egg well Beaten
1 Tablespoon Margarine
1/2 teaspoon vanilla
1 can crushed Pineapple
Directions:
Combine sugar, salt,cornstarch, with a little bit of milk. Mix with sugar, salt, and cornstarch. Add vanilla and margarine. Cook slowly until thickens. Add pineapple and juices and cook until it thickens again. Put Icing on just the tops of the three layers. I put tin foil around the cake to keep it from sliding until the icing sets up. Refrigerate cake!!!


GRANNY ANNIE'S FUDGE CHOCOLATE PIE

Ingredients:
2 eggs
1 1/2 cups sugar
1/2 stick oleo
3 1/4 tablespoons cocoa
1 teaspoon vanilla
1 small can Pet Milk
Directions:
Pour blended mixture into unbaked pie shell and cook for 25-30 minutes at 350 degrees.


AUNT SALLIE'S ORANGE SALAD

Ingredients:
1 large carton of cottage cheese
1 parge package of orange jello
1 large can crushed pineapple drained well
1 large can of mandarine oranges drained and cut 
  into small pieces
1 large tub of cool whip
Directions:
Mix all of the ingredients together in mixing bowl. Pour into serving dish. Refrigerate and chill for several hours before serving.


MISTY'S SWEET POTATO CASSEROLE

Ingredients:
3 cups mashed sweet potatoes
1 cup sugar
1 teaspoon salt
2 eggs beaten
1/2 stick margarine
1/2 cup milk
vanilla
Mix all of the above ingredients together.
Topping Ingredients:
1/2 cup plain flour
1 cup Brown Sugar
1 cup chopped nuts
1/2 cup melted margarine
Mix til crumbly and sprinkle over casserole.Bake at 350 degrees for 35 minutes. Serves 8.( I generally spray the casserole dish with non-stick spray. Makes the cleaning up easier)


SCALLOPED OYSTER CASSEROLE

Ingredients:
4 cups saltine cracker crumbs
1 cup melted butter
Mix together. Then add:
1 pint oysters
1 teaspoon salt
1/8 teaspoon pepper
oyster liquid
4 Tablespoons milk (more if needed)
Directions:
Crush crackers and mix with butter. Put 1/2 of cracker crumbs in buttered casserole dish. Then put a layer of oysters on top of crumbs. Cover with remaining crackers. Pour oyster liquid, seasonings, and milk mixture over top. Bake in a greased dish at 450 degrees for 30 minutes.


PEARL'S CHOCOLATE PIE

Ingredients:
1/2 cup cocoa
1 1/2 cups sugar
1/4 cup cornstarch
3/4 teaspoon salt
2 cups carnation milk
3 egg yolks
2 teaspoons vanilla
Directions:
Cook in sauce pan over medium heat. Cook til thickened. Poor into a backed deep dish pie crust. May top with whip cream, etc.


BANANA NUT BREAD

Ingredients:
1/2 cup shortening
2 cups mashed bananas
1 cup sugar
2 eggs
2 cups flour, shifted
1 teaspoon soda
1 teaspoon salt
1/2 cup nuts (optional)
Directions:
Cream shortening and sugar. Add beaten eggs. Then bananas. Add salt and soda to flour and shift into mixture. Add nuts. Bake in 2 small greased loaft pans at 350 degrees for 40 to 45 minutes.
(You can also add crushed pineapple if there isn't enough bananas and it makes it more moist.


GAIL'S 12 LAYER CHOCOLATE CAKE

Ingredients:
1 Duncan Hines Moist Deluxe Yellow cake mix divided equally between 12 (8-inch cake pans).Layers are very thin, so watch carefully to prevent burning. Cool Layers.
Icing:
2/3 cups cocoa
1 1/2 cups milk - canned milk
3 cups sugar
dash salt
1 stick butter or margarine
1 teaspoon vanilla
Directions:
Cook to a soft ball stage. Once it starts to harden on spoon cook 3 to 4 minutes longer. Stir constantly. Put icing between layers and on top layer; then on sides of cake. You have to work fast because it starts to harden up towards the end. YUMMY!!!
WESLEY'S (TheGoldEagle) POPCORN BALLS

Ingredients:
2 quarts popcorn popped
1 cup sugar
1/3 cup light corn syrup
1/3 cup water
1/4 cup butter or margarine
1/2 teaspoon salt
1 teaspoon vanilla
Directions:
Mix the above ingredients. Cook til mixture comes to a boil and a small amount of dyrup dropped into cold water seperates into threads, which are hard but not brittle - Poor over popcorn. Cool enough to handle with greased hands and shape into popcorn balls. Makes 12 servings!
PINEAPPLE COCONUT FROSTING

Ingredients:
Mix together in sauce pan the following:
1 can crushed pineapple
1/2 box confectioner's sugar
1/2 stick oleo
1 teaspoon vanilla
6 tablespoons flour to thicken
Directions:
Cook until of spreading consistancy. Mix in about 1 cup coconut. Spread mixture over cake, then sprinkle the top layer of cake with coconut to top off the frosting on top layer!
PREACHER COOKIES

Ingredients:
5 tablespoons cocoa
2 cups sugar
1/2 cup milk
1 stick margarine
Mix together, bring to boil and boil for 3 minutes. Remove from heat and add:
1/2 cup peanut butter
1/2 cup nuts or coconut
1 teaspoon vanilla
3 cups oatmeal
Mix well and drop by spoonfuls on wax paper. Yields about 4 dozen.
PIE CRUST PASTRY

Ingredients:
1 1/2 cups enriched flour
1/2 teaspoon salt
1/2 cup shortening
4 to 5 tablespoons cold water
Directions:
Sift flour and salt, cut in shortening until pieces are size of small peas. Add water a spoonful at a time until all is barely dampened. Turn on wax paper, gather up corners, pressing from outside to form a compact ball. Chill in refrigerator and divide for upper and lower crusts. Roll.
PEACH COBBLER

Ingredients:
1 cup self-rising flour
1 cup sugar
1 cup milk
2 tablespoons butter or margarine
1 teaspoon vanilla
1 large can of peaches diced up..reserve the juices.
Directions:
Combine the milk, sugar, flour,vanilla, and peaches. Mix well . Add about half to 3/4 of the reserved peach juice. Melt butter in pyrex casserole dish. Pour mixture into dish. Bake on 375 degrees for about 50 to 55 minutes. Serve with vanilla ice cream!!! Can also substitute 
and use different fruits!
PINEAPPLE PUNCH

Ingredients:
1   46-oz can pineapple juice
5   cups sugar (I use 3 heaping)
4 small packages of Lemonade flavored Kool-Aide
  unsweetened.
4 quarts + 2 cups water. Mix together until sugar   dissolves(may want to use warm water). Freeze 
  in 1/2 gallon containers. Take out of Freezer
  about 4 to 5 hours before using . Put in punch
  bowl and chop up...will be like a slushy...add 
  1 bottle of ginger ale and 1 bottle of sprite. 
  If you want to change the color for the occa-
  sion, just change the kool-aide flavor and 
  color...any flavor works well.Great for recep-
  tions and weddings...Just keep mixing till you
  have enough made up for the number of guest.
  Keeps for up to 6 month in freezer!!!

STUFFED PEPPERS

Ingredients:
1  lb. hamburger
1  onion
1/2 cup rice (uncooked)
1  egg
1 can tomatoes (drained) reserve the juices for     later.
6 to 8 green peppers
1 1/2 teaspoons salt
1/8 teaspoon pepper
Directions:
Cut out stems of peppers and clean out seeds, mix hamburger, onion, rice, egg, tomatoes and seasoning together and fill peppers, being careful not to overstuff as rice will swell when cooked. Put in deep pan with a little water and steam for about 45 minutes. Make thickening with reserved tomato juices saved by adding 2 tablespoons flour and t teaspoon sugar. Pour in pan and let simmer for about 5 minutes or till thickened...Hope You Enjoy!!!

Wesley's (TheGoldEagle's) SWEET POTATO BISCUITS
Ingredient's: 1 29 oz can sweet potatoes drained 1/4 cup shortening 1 cup sugar 3 cups self-rising flour Directions: Take shortening and work into the flour. Add sugar. Then add sweet potatoes and work in the flour mixture. Work into a ball. Add another 1/2 cup flour to the mixture..just sprinkling over the mixture and around it to keep from sticking to hands. Take enough of the mixture and roll in a ball and press out forming the shape of a biscuit and continue the process with the rest of the dough. Preheat oven to 450 degrees and cook until lightly browned..approx. 20 to 25 minutes. Use a nonstick baking tin. Makes 16 biscuits..These are out of this WORLD!!!!!


HEATHER'S SHANGHAI SURPRISE
Ingredients: Round steak, thinly sliced & cut up. Pint of fresh mushrooms sliced 1 large green pepper,sliced in small pieces
1-2 Jalopeno peppers, diced fine 1 large sweet onion, fan cut 1 small can sliced water chestnuts 1/2 cup chardonnay white wine 1/2 cup soy sauce 2 tablespoon red wine vinegar Method: Combine all of the above ingredients together and cook til done. Make a corn starch gravy out of juices. Serve with Jasmine Rice. Servings: 4
