I like most all types of food. Be it Italian,
Greek, German, French, Chinese, Southern,
Southwest, Midwest, etc...
I will try almost anything once.

I really don't have a favorite.. but any type
of Seafood would be at the top of my list
when dining out if I have a choice..

Here you will find a few more of my favorites
I make at home..

I hope you will find a new recipe you would
like to try among these I have chosen..

"Basic Quiche"
And Some Variations..


1 9" Pie Shell
4 Eggs
1 1/2 cups Half n Half
1 to 1 1/2 cups shredded Swiss or Cheddar Cheese
1/2 tsp Salt
1/4 tsp Pepper


Directions:

Prebake pie shell.

Beat together eggs, cream, salt, and pepper.
Add cheese to pie shell and pour egg mixture over.
Bake in a 350' oven for 35 to 40 minutes or until
a toothpick inserted in middle comes out clean.

Let stand 5 to 10 minutes before cutting
into wedges to serve.




"Quiche Lorraine"

Add 6 slices of crisp bacon..crumbled, 1/4 cup
diced onion, and a dash of nutmeg to cheese
prior to adding the egg mixture.
Bake as directed.

For the traditional Quiche Lorraine use swiss cheese.
You may also use 1 cup thinly sliced and
chopped ham instead of bacon.




"Spinach Quiche"

Thaw and drain 10 oz. pkg of spinach, add to
cheese with 1/4 tsp dry mustard and 1/4 tsp
tarragon prior to adding egg mixture.
Bake as directed.

Try using combination of crumbled feta cheese
and cheddar.




"Vegetable Quiche"

Thaw and drain 10 oz. pkg of broccoli and cauliflower.

Add to cheese with 1/4 cup diced onion, 1/4 cup
diced mushrooms, 1/4 cup diced sweet red pepper,
and 1/4 cup shredded carrots, prior to adding
egg mixture. Bake as directed.


This dish is wonderful using a combination
of swiss and cheddar, but try your own
favorite kind of cheese.




"Taco Quiche"

Instead of using a pie shell, line a lightly
greased pie plate with tortillas-tearing
them to fit as necessary.

Brown 1 lb ground beef or turkey with 1/2 cup
diced spanish onion. Drain well.
Stir in 1 tsp each: garlic, chili powder,
oregano, cumin, and thyme into beef mixture.

Pour meat mixture into pie plate,
on top of tortillas.
Add cheddar cheese then egg mixture and
bake as directed.
Just prior to serving, spread top with
sour cream and top with diced tomatoes,
and shredded lettuce.
Serve a dollop of salsa on the side.

According to your taste, try adding diced
avocado and black olives also.

This is a spicy one that is definitely not
your average quiche!!

Experiement and Enjoy.. When you serve a quiche
just add a salad and you have a quick and easy
meal for your family or company...





"Baked Potato Soup"


Ingredients:

1 1/2 lbs. baking potatoes
1/4 lb. Butter
2 cups yellow onion--diced
1/3 cups flour
5 cups Water
1/4 cups chicken base
1 cups instant potato flakes
3/4 tsp. dried basil
1/2 tsp. Tabasco sauce
1 cup heavy cream
1 cup milk
Salt to taste
White Pepper to taste


Directions:

Preheat oven to 400.
Prick washed potatoes & bake until a fork
pierces to the center easily.
Remove potatoes from oven & allow to fully cool.
Remove skin & cut potatoes into 1/2" cubes.
Set aside.

Melt butter in a large saucepan. Add onions
& saute over low heat for 10 minutes or
until onions are translucent. Don't allow
onions to burn.
Add flour to onions & butter and cook 4-5
minutes, stirring until flour is absorbed.

In a separate container, combine water,
chicken base, (you may use 5 cups of chicken
stock instead of water and chicken base),
potato flakes & seasonings.

Stir or whisk thoroughly to eliminate lumps.
Add slowly to onion mixture, stirring
constantly so no lumps form.

Increase to medium heat & continue cooking
until the soup begins to gently simmer.

Add milk & cream, stirring until smooth &
lightly thickened. Simmer for 15 minutes.
Do not boil. Soup should just simmer lightly.
Add cubed baked potatoes & stir to combine.


Remove from heat & serve.
Top each serving with grated cheddar cheese,
thinly sliced scallions & crisp bacon pieces.







"White Chili"


Ingredients:

2 Tbsps. Vegetable oil
1 med. white onion finely chopped
1 tsp.each.. garlic powder, salt, gr.cumin,
oregano, gr.corriander, white pepper
1 tsp. hot pepper sauce (or to taste)
2 cans (15.8 oz each) great nothern beans
(don't drain)
2 cans chicken broth (10.5 oz each)
2 cups diced boneless,skinless, chicken breast


Directions:

Heat oil over med. heat, saute onion until soft
Add next 7 indredients. Stir until well blended.
Add remaining ingredients, bring to a boil.
Reduce heat to low and simmer for about 1 hour

"Ranch House Pudding"


Ingredients:

1 cup brown sugar
2 cups water
2 Tbsps. butter
3/4 cup brown sugar (packed)
1/3 cup bisquick
1 cup cut-up dates..or raisins
1/2 cup chopped walnuts or pecans


Directions:

In a saucepan heat 1 cup brown sugar, 2 cups
water and the butter, stirring ocasionally.
Boil 5 minutes pour into ungreased 8x8" baking pan.

Mix remaining ingredients, spoon batter onto mixture in pan.

Bake 40-45 minutes at 350º. serve warm with
whipped cream or homemade vanilla ice cream
and sprinkled with ground ginger.







"Butterscotch Brownies"


Ingredients:

1-(6oz.) bag Butterscotch chips
1/4 cup butter
1 cup lt.brown sugar (packed)
2 eggs
1/2 tsp. vanilla extract
1 cup sifted flour
1 tsp. baking powder
3/4 tsp. salt
1/2 cup chopped walnuts or pecans


Directions:

Melt over hot water (Not Boiling) the
Butterscotch bits and butter.

Remove from heat. Stir in brown sugar.
Cool 5 minutes.

Blend in eggs and vanilla..
Sift together flour, baking powder and salt.
Add to mixture stirring well to mix.
Stir in nuts..

Spread into a greased and floured
9"x13"x2" baking dish.

Bake at 350 for 25 minutes or until done.
Cool and cut into 2" squares..

Yield: 2 dozen squares







"Peanut Butter-Chocolate Chip Cookies"


Ingredients:

2 eggs
1/3 cup water
1/4 cup softened butter
1 cup creamy peanut butter
1 pkg.cake mix (chocolate, white or yellow)
1-(12oz.) pkg. chocolate chips (use 3/4 bag)
3/4 cup walnuts or pecans


Directions:

Combine all ingredients and drop on
ungreased cookie sheet.

Bake at 375 for 10-12 minutes..
