Here is a slightly different than usual

Biscuit Recipe

Sift together 2 cups cakeflour
2 teaspoons of baking powder
1 tablespoon sugar
1 teaspoon salt
Cut in with pastry blender
2 tablespoons oleo
Stir in 3/4 cup milk
Let rise 30 minutes
Roll out on floured board and cut with biscuit cutter.
Bake in 425 degree oven for 15 minutes
or until done.
This makes an excellent dessert biscuit.





Muffins

Sift together 1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
set aside
Blend together 1/2 cup sugar
1/4 cup shortening
Beat in 1 egg
Add 1/2 cup milk
Stir in the flour mixture until just blended.

Spoon into greased muffin pans and bake 20 to 25 minutes at 400 degrees.
These are good wiith a cup of tea.




Honey goes well on

English Muffin Bread

This is baked in the microwave oven.

Mix together 1 1/2 cups flour
1 package dry yeast
1/2 tablespoon sugar
1/8 teaspoon soda
1 teaspoon salt.
Add to flour mixture
1/4 cup very warm water and
1 cup very warm milk
Add as much of another cup of flour as needed to make a stiff dough.
Push dough into glass
bread pan
that has been greased and coated with cornmeal
Let rise 45 minutes

Microwave 6 and 1/2 minutes on High.
Let rest 5 minutes before removing from pan.
The loaf will be white and cuts better the second day.
Toast slices and enjoy with honey or jam.




Vena's Nut Bread

This results in a hump-backed loaf
no matter what you do to keep it even.

Sift together 2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon salt
Stir 1 egg into
1 cup of milk
mix with flour.
Add 1/2 cup broken nutmeats.

Pour into greased bread pan
Bake at 375 degrees until tester comes out clean, about 30 minutes.

This is good cold or toasted, with butter or cream cheese,
for breakfast, lunch, dinner, or tea time.
The recipe can be doubled which isn't a bad idea!


Fluffy Waffles


Melt 6 tablespoons oleo and set aside
Beat 2 egg white until stiff and set aside

Beat together 1 and 1/2 cups milk, 2 egg yolks, and 1 teaspoon vanilla
Sift together 2 cups flour, 3 teaspoons baking powder, 1 teaspoon salt, and 3 tablespoons of sugar
Beat into liquid mixture.
Fold in beaten egg whites

Bake and serve with maple syrup and butter or dusted with confectioners sugar with fruit.
May be stored in covered dish in the refrigerator for 2 or 3 days.
