Sunshine Cake

Separate 6 eggs
Beat the whites with 1/2 teaspoon of cream of tartar until very stiff
Beat yolks until foamy
Add slowly 1 cup of white sugar and beat
Add 1 teaspoon vanilla or lemon flavoring
Add 1 cup of flour sifted with 1/2 teaspoon salt alternately with
1/4 cup of cold water

Fold beaten egg whites into batter
Spoon into an angel food pan (tubepan)
Run a knife through the batter to get out large air bubbles.
Bake at 275 degrees for 1 hour.
Set pan on a cooling rack right side up until cold.
This is good with fruit and whipped cream, ice cream and sauce, or just by itself.



Aunt Lone's Roll Jel Cake

Beat 3 eggs until thick
Add slowly 1/2 cup sugar
Add 1 teaspoon vanilla
Sift together1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
Add alternately with 1/4 cup cold water

Bake in a greased shallow pan lined with greased waxed paper
12 to 15 minutes at 375 degrees.
Cake will be lightly browned and springy to the touch when done
Turn out on a clean towel coated with confectioner's sugar and roll as tightly as you can. You may have to trim off the edges if they are too crisp. When cool, unroll and spread with
jam or jelly
then roll back up.




Southern Spanish Cake

Separate 2 eggs and Beat the whites until stiff
Set aside
Sift together 1 and 3/4 cups flour
1 and 1/2 teaspoons baking powder
1 scant teaspoon of salt
1 generous teaspoon of cinnamon
Set aside

Cream 1/2 cup shortening with
1 cup of sugar
Add 2 egg yolks
Add a third of the flour mixture and beat smooth
Add 1/4 cup of milk and beat smooth
Add another third of the flour and beat smooth
Add another 1/4 cup milk and beat
Add rest of flour and beat smooth.
Fold in stiffly beaten egg whites
Fill two greased and floured round cake pans and bake at 375 degrees for about 25 minutes.
Turn out on racks to cool before frosting


Morroco Frosting

2 unbeaten egg whites
1 and 1/2 cups white sugar
1/4 cup brown sugar
Place in a double boiler over hot water
heat and beat 7 minutes.
Remove from heat and set on a clean, folded towel
Fold in very carefully
5 tablespoons of cold water
1 square of melted chocolate.
Spread between the layers and over sides and top of cake.



Southern Spicy Gingerbread

Sift together 2 and 1/2 cups flour
2 teaspoons soda
2 generous teaspoons ginger
2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon baking powder
set aside
In large bowl
Beat 2 eggs
Add 3/4 cup brown sugar
3/4 cup molasses, light or dark,
3/4 cups melted shortening
Blend well
Add alternatelyflour mixture and
1 cup boiling water
Pour into greased and floured 9" by 12" cake pan
Bake at 350 30 minutes or until cake tester comes out clean.


Hot Lemon Sauce

In a 1 quart sauce pan
Mix thoroughly 1 cup sugar
2 tablespoons flour
Add grated rind and juice of 1 lemon
2 cups boiling water
2 tablespoons butter or oleo
Stir constantly over medium flame until reaches a boil and thickens.
Serve over gingerbread.
May be refrigerated and re-heated.
