More Cookies


Some times they eat them faster than you can bake them. These recipes all have nuts in them. Maybe that will slow down the chewing a bit.



Katy's Brownies

set oven at 375
Cream 1/3 cup shortening with 1 cup sugar
Add 2 eggs and beat well
Sift together 1 cup flour, 1/4 teaspoon salt, 1/2 teaspoon baking powder
Mix into batter alternately with 1/4 cup milk.
Add 1/2 cup chopped nut meats
Pour into greased and floured pan and bake 20 minutes.
Recipe may be doubled and 10 minutes baking time added. Test for doneness as you would a cake.




Butterscotch Cookies

Mix these the night before, roll them in waxed paper, refrigerate, slice and bake the next day.

Cream together till light, 1/2 cup shortening and 1 cup brown sugar (firmly packed)
Add 1 well beaten egg
Sift together 1 and 1/2 cups flour, 1 and 1/2 teaspoons baking powder, and 1/2 teaspoon salt.Stir into first mixture.
Add 1 teaspoon vanilla and 1/2 cups nut meats.
To bake slice with sharp knife into 1/8th inch slices. Place on greased cookie sheep and bake in 400 degree oven for 8 to 10 minutes. Watch carefully for the thin places and nuts will burn.
You should have 5 to 6 dozen cookies, but not for long once the family gets a whif and a taste of them.


Mother's Date-Nut Bars

Beat until frothy 2 eggs
Gradually add 1 cup brown sugar and 1 teaspoon vanilla
Sift together three quarters cup flour,
1/3 tsp baking powder, 1/3 tsp salt
Stir into eggs
Mix in 1 cup chopped dates and
1/2 cup chopped nuts

Spread in greased 8 X 8 X 2 inch pan

Bake at 325 degrees until tester comes out clean.

Cut in squares.



Vanilla Balls

Cream 3/4 cup butter with
1/4 cup cream or evaporated milk
and 1 teaspoon vanilla

Sift together 1 and 3/4 cups flour
1 scant teaspoon salt and
6 tablespoons Confectioners sugar
Blend dry ingredients with butter and cream mixture
Add 1 cup chopped nut meats

Chill dough an hour or two or over night.

Roll small balls of dough in your hand. Place on lightly greased cookie sheet and Bake 30 minutes at 325 degrees.

Roll in confectioners sugar while still hot.
