These cookies are especially easy because they're no-bake. They're from the Better Homes & Gardens Cookies for Kids cookbook, which has been in my family since the early '80s and has become a dog-eared necessity. Hint: To crush the graham crackers, put about 5 squares at a time in a plastic baggie, close, and gently crush with a rolling pin.

Apricot Balls

Ingredients:

makes about 36 cookies.

Directions:

  1. In a medium mixing bowl, stir together Grape Nuts cereal, graham cracker crumbs, apricot bits, pecan pieces, and 1/2 cup powdered sugar.
  2. Stir in corn syrup and orange juice.
  3. With buttered hands, shape into 3/4-inch balls.
  4. Roll the balls in wheat germ. Store in a covered container.

These are tied for my favorite cookie with pecan balls. But these are no-bake, so they're even easier, and fun to make with kids. Be sure to butter your hands well, though!
