When adding text, I work with the colors first. Open a new selection 100 x 100. At this point, choose the same color for your background and foreground colors, it won't matter. Flood fill the selection. Change the foreground color to something dark. Select text, play around with this and whatever looks clear and concise. Add the text to the selection and rotate 25 degrees. Add a drop shadow, I used white with a high opaqueness. Then choose grey scale under colors. Adjust your brightness and contrast. Remember you don't want text to be blurred with the background here, so go light. Save as a gif file.
