Twice Baked Potatoes
---
3 lbs. baking potatoes (about
6-8 med.size)
1/2 Cup of Milk
1/2 Cup of Sour Cream
1/2 Cup of Chopped Green Onions
1/2 Cup of Butter
1 Cup of Shredded Cheddar
Cheese
Some white pepper to taste
Clean potatoes, spray them
with Pam cooking spray, and bake them till done,
approx. 45 minutes on 350
degree oven.
Cut potatoes in half (let
them cool a little cause they will be hot), and scoop out
insides being careful not
to cut into the shell. Put insides into a bowl.
Saute' onions in 1/2 of the
Butter until tender.
Combine ingredients together
(except the cheese) and mix briefly with mixer till fluffy.
Fold in the cheese by hand,
put mixture into the half shells, and sprinkle the other
1/2 of the butter on the shells
before re-baking on 350 degree oven for 20
minutes or so.
Excess potatoes can be frozen
(do before the second baking, and do not add
the second half of the butter
until after being frozen and ready to bake).

This is a very good recipe great
to have extra in the
freezer, ready for company
---
Variations: You can add a pinch of garlic powder, or some crumbled
bacon bits as desired.
