So Easy,Yet They'll Think You Slaved Over The Stove All Day!







CHICKEN A LA BONNIE
6 to 8 pieces frying chicken 2 cans mushroom soup 1 soup can milk 2 cups reg. rice Layer rice in bottom of 13"by 9" baking pan. Place chicken on top of rice. Heat soup and milk in saucepan until smooth. Pour over chicken. Bake at 350* until chicken is done, about 1 hour. (I came up with this recipe long before Campbell's. Mine is better. They use water!)
COUNTRY FRIED STEAK
Cube steak seasoned flour* Use as much steak as you need for your family. Roll the steak in the flour and fry over medium heat until steak is done to your liking. You can use the pan drippings and a little more flour to make gravy if you like.
GRAVY
Add enough shortening or butter to pan to equal 6 Tbsp. Add 6 Tbsp. seasoned flour. Stir until smooth. Add 3 cups milk or water. Cook over med-high heat until thickened. *Depending on what part of the country you are in, seasoned flour is usually sold in any grocery store. If not, you can make your own by adding a tsp.salt, a tsp. pepper, and any other of your favorite spices to a cup of flour. You can also purchase the flour from Big Springs Mill in Elliston, Va. CREAMED POTATOES
6-8 medium potatoes, peeled and diced 2 cups medium white sauce* Boil potatoes in salted water until done but not mushy. Drain well. Pour white sauce over potatoes and serve. DELICIOUSLY different!
MEDIUM WHITE SAUCE
2 TBSP. butter or margarine 2 TBSP. flour 1 Cup milk Salt and pepper to taste Mix flour and butter over medium heat until smooth. Add milk and continue to cook over medium heat, stirring constantly, until mixture comes to a boil. Boil one minute, then remove from heat. Makes one cup. Recipe may be doubled or trippled according to how much you need.
CHEESY POTATOES
Leftover mashed potatoes butter cheese Mix potatoes, with a little butter, maybe some milk, and cheese, either slices broken up or shredded cheese, such as cheddar or motzarella. Use your own judgement as to how much according to your taste. Heat in 350* oven until hot, about 20-25 Min. May also be baked in the microwave.
POTATO CAKES
Leftover mashed potatoes flour finely chopped onion 1 egg, slightly beaten Mix potatoes, onion and egg. Add enough flour to make a firm patty. Heat small amount of butter or margarine in skillet over medium heat. Fry potato cakes until will browned and hot, about 12-15 min. Make sure you let the cakes brown throughly before turning so they won't fall apart.
HOMEMADE SALAD DRESSING
4 TBSP. mayonnaise 1 1/2 TBSP. catsup milk Stir together mayonnaise and catsup. Add enough milk to make desired consistency. Use immediately. Similar to french dressing, but much better! You can use more or less catsup, according to your taste.
