Honey Orange Biscotti

Yield: 24 Cookies     Oven Temp: 350 F     Prep. Time: 30 min.

Ingredients:
2 Cup Flour (All Purpose)
1/3 Cup Sugar (Granulated)
2 Tsp. Baking Powder
1 Tsp. Orange Peel (Grated)
1/3 Cup Pecan (Chopped)
1/4 Cup Egg (Substitute)
2 Tbs. Egg (Substitute)
2 Tbs. Honey
2 Tbs. Frozen Orange Juice Concentrate (Thawed)

Instructions:
1. In a large bowl, combine flour, sugar, baking powder, and orange rind and stir to mix well.
2. Add the pecans if desired and stir to mix.
3. Add the remaining ingredients and stir just until the dough holds together.
4. Turn the dough onto lightly floured surface and shape into two 8x2" logs.
5. If the dough is too sticky to handle, knead in a little more flour.
6. Flatten the logs a little bit or else the crust will split and crack.
7. Coat a baking sheet with nonstick cooking spray.
8. Place the logs on a sheet.
9. Bake for about 23 minutes, or until lightly brown.
10. Transfer the logs to a wire rack and allow to cool for 10 min.
11. Reduce the oven temp to 300.
12. Place the logs on a cutting board and use a serrated knife to slice the logs diagonally into 1/2" thick slices.
13. Place the slices on a baking sheet and bake 20 minutes or until lightly browned, turning after 10 minutes.
