Pistachio & Cherry Biscotti

Yield: 48 Cookies      Oven Temp: 350 F       Prep. Time: 30 min.

Ingredients:
2 Cup Flour
1 Cup Sugar
1 Tsp. Baking Powder
1/4 Tsp. Salt
1/8 Tsp. Cinnamon
4 Tbs. Butter, Cold
3 Each Egg, Beaten
1 Cup Tart Cherries (Dried)
1 Cup Pistachios,  Toasted & Chopped
1 Tsp. Vanilla Extract
6 oz White Chocolate Chips
2 Tsp. Shortening

Instructions:
1. Mix first 5 ingredients.
2. Cut in butter until fine crumbs.
3. Reserve 1T of egg.
4. Mix rest of eggs, cherries, pistachio, and vanilla into flour mixture.
5. Divide dough into quarters.
6. Form 9in by 2in log out of each quarter.
7. Place 2 logs per ungreased baking sheet.
8. Brush logs with reserved egg.
9. Bake 25 min.
10. Rotate cookie sheets half way through if cooking 2 sheets at once.
11. Cool logs on wire rack for 10 minutes.
12. Cut log crosswise into 1/2-in slices.
13. Place slices on cookie sheet.
14. Bake 15 min.
15. Cool biscotti completely.
16. Place white chocolate and shortening in a microwave safe bowl.
17. Microwave on high for 1-1/2 min on high.
18. Wisk mixture until smooth.
19.Spread chocolate onto biscotti with small metal spatula.
20. Cool, chocolate side up, on wire rack.
