Mint Melt-A-Ways

Yield: 36 Cookies Oven Temp: 325 F Prep. Time: min.

Ingredients:
1 Cup Butter (Unsalted)
1 Cup Butter Mints (Crushed)
2 Cup Flour (All Purpose)
1 Tbs. Sugar

Instructions:
1. Beat butter in a mixing bowl w/ electric mixer on medium speed for 30 seconds.
2. Add mints and beat until fluffy.
3. Beat in as much of the flour as you can. Stir in remaining flour.
4. Cover and chill 1 hour.
5. Roll or pat dough on waxed paper into a 9" square.
6. Sprinkle with sugar.
7. Cut into 1 1/2" squares.
8. Place on an ungreased cookie sheet.
9. Using small cookie cutter press a design on the surface of dough.
10. Bake for 12 to 15 minutes or until brown. Do not over bake.
11. Cool on rack.
