Lemon Strawberry Triangles

Ingredients:
3/4 Cup Jam (Strawberry)
1/2 Cup Hazelnuts (Ground)
1/5 Cup Butter
3 Oz. Cream Cheese (Softened)
1 Cup Sugar (Granulated)
1/2 Tsp. Baking Powder
1 Each Egg
1 Tsp. Vanilla Extract
2 2/3 Cup Flour (All Purpose)
2 Tsp. Lemon Peel (Shredded)

Instructions:

Filling

1. Place strawberry jam in small bowl.
2. Snip any large pieces of strawberry.
3. Stir in groundnuts.
4. Set aside.

Cookie

1. Beat butter and cream cheese in a large mixing bowl on medium to high speed for 30 seconds.
2. Add sugar and baking powder; beat 'till well combined.
3. Beat in egg and vanilla 'till thoroughly combined.
4. Beat in as much of the flour as you can with the mixer.
5. Stir in lemon peel and any remaining flour with a wooden spoon.
6. Divide dough in half.
7. Chill about four hours until firm.

Assembly

1. Remove one roll from the refrigerator.
2. Unwrap and reshape slightly, if necessary.
3. Carefully cut into 0.25" thick slices.
4. Place 2" apart on greased cookie sheet.

Bake

1. 8-10 minutes or until edges are firm.
2. Cool on cookie sheet for 1 minute.
3. Remove and cool completely on wire rack.
