filled cheese cookies

Yield: 36 Cookies Oven Temp: 400 F Prep. Time: 30 min.

Ingredients: 
2 Cup Flour (All Purpose)
2 Cup Cheddar Cheese (Finely Grated)
1/2 Tsp. Salt
1/2 Cup Butter
1/4 Cup Milk
3/4 Cup Jelly (Raspberry)
2 Tbs. Sugar (Brown)
2 Tbs. Cinnamon (Ground)
1/4 Tsp. Salt
1.5 Cup Walnuts (Chopped)

Instructions:

Cookies

1. In a large bowl, combine the flour, cheese and salt.
2. Cut in the butter until the mixture resembles course crumbs.
3. Stir in milk.
4. Cover and chill in the refrigerator for at least 2 hours.

Filling

5. Combine jam, brown sugar, cinnamon, and salt in a small bowl and stir to blend.
6. Stir in walnuts.

Assemble

1. On a floured surface, roll out the dough to a thickness of 1/8".
2. Using a 1.50" round cookie cutter, cut out an even number of cookies.
3. Place a spoonful of filling in the center of half the cookies.
4. Place the remaining cookies on top and seal the edges.
5. Place 1" apart on lightly greased cookie sheets.
6. Bake for 12 to 15 min., until lightly colored.
