Ingredients: | |||||||||||||
3/4 | Cup | Butter | (Unsalted) | ||||||||||
1/4 | Cup | Sugar | (Brown) ; packed | ||||||||||
1 | Each | Egg (Yolk) | |||||||||||
1 | Tsp. | Almond Extract | |||||||||||
2 | Cup | Flour | (All Purpose) | ||||||||||
5 | Tbs. | Sesame Seeds (Toasted) | |||||||||||
12 | Oz. | Jelly | (Apricot) | ||||||||||
1/4 | Tsp. | Salt | |||||||||||
Instructions: | |||||||||||||
1. Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. | |||||||||||||
2. Add brown sugar and salt; beat until combined. | |||||||||||||
3. Beat in egg yolk and almond extract 'till combined. | |||||||||||||
4. Beat in as much of the flour as you can with the mixer. | |||||||||||||
5. Stir in any remaining flour with a wooden spoon. | |||||||||||||
6. Shape into 1-inch balls; roll in sesame seed. | |||||||||||||
7. Place balls 1.5" apart on lightly greased cookie sheets. | |||||||||||||
8. Flatten cookies slightly and indent centers with your thumb. | |||||||||||||
9. Fill thumbprints with desired preserves of jelly, using about 0.5 tsp. for each cookie. | |||||||||||||
10. Bake for 10 min. or until edges are firm. | |||||||||||||
11. Cool cookies on wire racks. | |||||||||||||
