sesame jam thumbprints

Ingredients: 
3/4 Cup Butter (Unsalted)
1/4 Cup Sugar (Brown) ; packed
1 Each Egg (Yolk)
1 Tsp. Almond Extract
2 Cup Flour (All Purpose)
5 Tbs. Sesame Seeds (Toasted)
12 Oz. Jelly (Apricot)
1/4 Tsp. Salt

Instructions:
1. Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
2. Add brown sugar and salt; beat until combined.
3. Beat in egg yolk and almond extract 'till combined.
4. Beat in as much of the flour as you can with the mixer.
5. Stir in any remaining flour with a wooden spoon.
6. Shape into 1-inch balls; roll in sesame seed.
7. Place balls 1.5" apart on lightly greased cookie sheets.
8. Flatten cookies slightly and indent centers with your thumb.
9. Fill thumbprints with desired preserves of jelly, using about 0.5 tsp. for each cookie.
10. Bake for 10 min. or until edges are firm.
11. Cool cookies on wire racks.
