Fudge Icing
Ingredients
2 cups sugar
2 squares chocolate
2/3 cup milk
1 Tbsp butter
1 Tsp vanilla
pinch salt
Directions
In a heavy pan, melt the chocolate over hot water.
Add the sugar,salt,butter and milk.
Bring mixture to a boil and cook to soft ball stage (236 deg).
Cool to room temperature.
Add in the vanilla.
Beat until thick and creamy.
Variations:
Try other flavorings such as rum,brandy,etc instead of the vanilla.
Add shredded coconut,mini chocolate chips,mini marshmallows,etc to the icing just before spreading on the cake.
