These recipes are from my Cajun Kin Folks.

Real Cajun Gumbo

What you need:

1 Onion        1 Bell Pepper

1 Stalk of Celery     1 Bunch of Green Onion

1T. Louisiana Gold Pepper Sauce 

2-3 T. Louisiana Seasoning

Some salt and garlic

Some File ( Fee-lay)

Some Okra ( if you have it)

1 stick of butter

1/2 c. oil    1/2c. flour

Sauté all the veggies and spice together in butter

Set aside

In a large Pot add 6 to 8 cups of Stock

You can use the following:

Chicken Stock, seafood stock, etc

Now put the oil and flour in an iron skillet and cook it until

it is real brown.  As it heats Stir it Stir it, and Stir it

The darker the Roux the Better!

Add Sautéed Items and finished roux, cook at least 1 hour

The longer it cooks the better it gets.

Hopefully by now you have discovered what you are gonna

put in this gumbo.... Put thing you like, Shrimp, Crab

Goat, Possum, Coon, Sausage, Chicken, Duck, Squirrel ,

It is all Good, or add them all together ! IIEE

Serve over Rice

Form My Grandmamma

Da Flakiest Pie Crust in da world

Dis enuf fer three nin inch pies

3 C. Flour (not self rising)

1 tsp. salt

1 1/4 C Crisco ( butter flavor)

5 Tsp. COLD water

2 Tsp. vinegar

Cut Crisco into dry mix of salt and flour.

Mix egg, water, and vinegar real well.

Add to mixture and mix.

If you don't do this it wont work!!

Put in refrig for at least 20 min.

Roll out and bake as usual.

HOT ROLLS

3 C flour ( not no but Helll no not self-rising)

3 Tbs Powdered milk ( don't substitute this, it wont work)

1/4 C. sugar

1 tsp salt

1 Egg

1 pack dry yeast ( or 3 Tbs)

1 C. HOT water (125 Deg)

1/8 C. 110 to 115 degree water

Mix all dry ingredients then cut in shortening.

Beat egg and add to hot water.

                  Mix yeast and 1/8 C. warm water with 1 tsp of sugar in separate container and let set.

                        Pour all liquid except yeast water in to dry flour and mix, mix, mix. If

                          you do this by hand then make sure its smooth. If by electric mixer, it takes about 10 min .

Put in greased bowl and let rise to double.

Roll out on floured surface and cut out rounds.

Put a pat of butter in middle and fold over.

Set on baking sheet; let rise again until double.

Bake at 350 degrees for about 20 min.

                       To double just X2. Again use POWERED MILK ONLY> an ifn it don't comes outs rite, you goofed it up!!!!!!
