Ah, Spring!  With the warming of the days and fields filled with flowers, who can resist spending a day outside?  Whether a picnic under a favourite tree, a day hike in the local mountains or a trip to the desert to see it in miraculous bloom with wildflowers, it's always a good idea to take along
something to snack on to keep up your energy!  Here's a twist on the backpacker's old standard trail-mix!  Enjoy! ~SHE

                                Ranger Cookies

2 Cups Flour
1/2 Lb Butter, softened
2 Cups Brown Sugar, firmly packed
2 Eggs
3 Tablespoons Lemon Juice (fresh, or 1 Tblsp reconstituted)
1 Teaspoon Baking Soda
1 Teaspoon Salt
3 Cups Rolled Oats (Quick-cooking type)
2 1/2 Cups Trail Mix (use your favourite mixture)

In a large bowl, combine butter and sugar until creamy.  In a separate smaller bowl, beat eggs, then add lemon juice and beat together.  Add to butter & sugar and combine. Mix in flour, baking soda and salt, blend thoroughly.  Blend in oats and trail mix, stirring until evenly worked into the mixture.

Drop by rounded teaspoonfuls onto ungreased baking sheets, about 2 inches apart.  Bake in a 350 degree oven (preheated) for 12 - 15 minutes.  Allow to sit on baking sheet for 1 minute after coming out of the oven, then transfer to racks to cool.  They store well in airtight containers for 3 days at room
tempurature and also freeze nicely (if they make it off the cooling racks, that is!).
