To avoid scrubbing pans, eliminate greasing them. Cover pan with parchment paper instead.











chocolate crinkles


ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter / margarine
  • 4 squares Baker's unsweetened chocolate
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1 cup confectioner's sugar

instructions

  • Pre-heat oven to 350°
  • Greased cookie sheets
  • Sift together flour, bak powder and salt 2 times
  • Melt together choc and butter
  • Add 2 cups sugar to chocolate
  • Add 1 egg at a time to choc mix
  • Add vanilla to choc mix
  • Add flour mix to choc mix
  • Chill at least 4 hours
  • Drop tsps of dough in confectioner's sugar
  • Roll in sugar
  • Shape into balls
  • Place 2" apart on cookie sheet
  • Bake 10 to 12 minutes
  • Cool on rack
  • Makes about 6 doz



chocolate chip tea cookies


ingredients

  • 2 cups all-purpose flour
  • 1/2 lb butter / margarine
  • 1/2 cup confectioner's sugar / sifted
  • 1 tsp vanilla
  • 2 cups Nestle choc chips / set aside 1/2 cup
  • 2/3 cup finely chopped nuts / optional
  • 2 1/2 tsp cinnamon

instructions

  • Pre-heat oven to 350°
  • Ungreased cookie sheets
  • In electric mixer beat butter and sugar until very creamy
  • Beat in vanilla
  • Gradually add flour, cinnamon and nuts
  • Stir in 1 1/2 cups choc chips
  • Shape into balls
  • Place 2" apart on cookie sheet
  • Bake 10 to 12 minutes
  • Cool on rack
  • Place 1/2 cup choc chips in sealed plastic bag
  • Microwave until melted/about 30 sec
  • Snip corner of bag
  • Drizzle chocolate on top of cold cookies
  • Chill 5 min/store at room temperature
  • Makes about 4 1/2 doz



It is difficult to know how many different ways there are to make the chocolate chip cookie that seems to be everyone's first choice for snacking pleasure. The following is my favorite recipe along with the recipes of two famous bakers. They are all a little different and all are worth trying.

ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp bak soda
  • 1 tsp salt
  • 2 eggs
  • 18 oz Nestle's choc chips
  • 1 cup butter / margarine
  • 3/4 cup firmly packed dark brown sugar
  • 3/4 cup sugar
  • 1 tsp vanilla

instructions

  • Pre-heat oven to 375°
  • Greased cookie sheets
  • Sift together flour, salt and bak soda
  • Med speed electric mixer beat butter and sugar
  • Add eggs and vanilla / beat until creamy
  • Gradually add flour / mix well
  • Low speed add choc chips / beat until just mixed
  • Drop by tsps on cookie sheet 2" apart
  • Bake 7 to 9 minutes
  • Cool on rack
  • Makes about 6 doz



oatmeal chocolate chip


ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp bak soda
  • 1/2 tsp salt
  • 2 large eggs
  • 18 oz Nestle's choc chips
  • 2 1/2 cups oatmeal
  • 1 cup butter / margarine
  • 1 1/4 cup firmly packed dark brown sugar
  • 1/2 cup sugar
  • 2 tbsps. milk
  • 2 tsp vanilla

instructions

  • Pre-heat oven to 375°
  • Ungreased cookie sheets
  • Sift together flour, salt and bak soda
  • Med speed electric mixer beat butter and sugar until creamy
  • Beat in eggs, milk and vanilla
  • Gradually add flour mixture / mix well
  • Add choc. chips and oatmeal / stir until just mixed
  • Drop by tbsps. on cookie sheet 2" apart
  • Bake 10 - 12 minutes
  • Cool on rack
  • Makes about 40 cookies



Mrs Fields

chocolate chip cookies


ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp bak soda
  • 1/4 tsp salt
  • 2 eggs
  • 12 oz semisweet choc chips
  • 1 cup butter / margarine
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup sugar
  • 2 tsp vanilla

instructions

  • Pre-heat oven to 300°
  • Ungreased cookie sheets
  • Combine flour, salt and bak soda in bowl using wire whisk
  • In mixer on med speed beat sugars
  • Add butter / beat until grainy paste forms
  • On med speed beat in eggs and vanilla until light and fluffy
  • Gradually add flour mix and choc chips
  • On low speed beat until mixed / not overmixed
  • Drop by rounded tbsps onto cookie sheets 2" apart
  • Bake until golden brown / about 22 minutes
  • Cool on rack
  • Makes about 3 1/2 doz



Neiman Marcus

chocolate chip cookies


ingredients

  • 2 cups butter
  • 4 cups all purpose flour
  • 2 tsp bak soda
  • 2 cups sugar
  • 5 cups blended oatmeal / blend in blendor to fine powder
  • 24 oz semisweet choc chips
  • 2 cups firmly packed dark brown sugar
  • 1 tsp salt
  • 1 - 8 oz Hershey bar grated
  • 4 eggs
  • 2 tsp bak powder
  • 3 cups chopped nuts
  • 2 tsp vanilla

instructions

  • Pre-heat oven to 375°
  • Greased cookie sheets
  • Combine flour, salt, oatmeal, bak powder and bak soda
  • In electric mixer on med speed cream together butter and sugars
  • Add eggs and vanilla
  • Add flour mix / beat well
  • On low speed add choc chips, Hershey bar and nuts
  • With hands form 1" balls
  • Place on cookie sheet 2" apart
  • Bake for 10 minutes
  • Cool on rack
  • Makes 112 cookies
  • This recipe can be halved

This is one of 3 recipes I have found that claim to be the original Neiman Marcus recipe. They all differ a little but all are comparable. To me this was the best.
