pound, sour cream, banana, gold layer plus icing





Pound cake is my cake of choice. I baked it quite often, usually in 6 one pound aluminum foil loaf pans. Everybody raved, especially my late husband. He enjoyed it most when it was at least 5 days old. Whether it was plain, marbleized or contained chocolate chips, he just loved it. For you, Bernie, I provide this recipe for all to try.



pound cake


ingredients

  • 4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 3 cups sugar
  • 1 lb butter / margarine
  • 8 lge eggs
  • 1 tbsp vanilla

instructions

  • Pre-heat oven to 350°
  • Grease & flour 6 - 1 lb loafpans / 1-10" tube spring pan
  • Combine sugar, baking powder & salt
  • In electric mixer, cream butter
  • Add eggs & sugar
  • Mix until smooth
  • On medium speed, alternately add flour mix & milk to butter mix
  • Add vanilla
  • Beat additional 10 minutes
  • Pour into pans
  • Bake loaf pans 40 minutes / or until toothpick comes out dry
  • Bake tube spring pan 70 minutes / or until toothpick comes out dry
  • Cool on rack
  • Freezes well / freeze in foil pans

For a marbleized cake, divide batter in half. Add 1/2 cup cocoa to one part. Pour white mix on bottom of pan and chocolate on top. You can substitute mini chocolate chips rolled in flour for the cocoa. Unfortunately, they don't always distribute properly.




sour cream cake


ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 pint sour cream
  • 1 1/2 cups sugar
  • 1/4 lb butter / margarine
  • 2 lge eggs
  • 1 tbsp vanilla
  • 1 1/2 tbsp cinnamon
  • 3/4 cup raisins

instructions

  • Pre-heat oven to 350°
  • Grease & flour 10" spring or tube pan
  • Combine 1/2 cup sugar, cinnamon & raisins
  • Combine flour, baking powder & salt
  • In small bowl mix sour cream & baking soda for 3 minutes
  • In electric mixer cream butter
  • Add eggs & 1 cup of sugar
  • Mix until smooth
  • On medium speed, alternately add flour mix & sour cream mix to butter mix / beat 6 minutes
  • Add vanilla
  • Gradually pour into pan sprinkling raisin mixture on each layer, ending with top
  • Bake 45 min / or until toothpick comes out dry
  • Cool on rack
  • Freezes well



gold layer cake


ingredients

  • 1 3/4 cups all purpose flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup of milk
  • 1 cup sugar
  • 1/2 cup butter / margarine
  • 8 egg yolks
  • 1/2 tsp vanilla

instructions

  • Pre-heat oven to 375°
  • Grease & flour 2 - 8" or 9" cake pans / 1 - 10" tube pan"
  • Combine flour, baking powder & salt
  • In electric mixer cream butter
  • Add sugar gradually / beat until fluffy
  • Separate bowl, beat egg yolks until thick and lemon color
  • Add eggs to butter mix
  • Add vanilla
  • Alternately add flour mix & milk to butter mix / beat 3 min
  • Bake 20 min in 2 cake pans / or toothpick comes out dry
  • Bake 40 min in tube pan / or toothpick comes out dry
  • Cool 5 min / remove from pan
  • Cool on rack
  • Freezes well



banana cake


ingredients

  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp sour cream
  • 1 1/2 cups sugar
  • 1/4 lb butter / margarine
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup ripe mashed bananas / three

instructions

  • Pre-heat oven to 350°
  • Grease & flour 2 - 8" or 9" cake pans / 1 - 10" tube pan
  • Combine flour & salt
  • Mix together bak soda & sour cream
  • In electric mixer cream butter
  • Add sugar & vanilla
  • Add flour mix & bananas
  • Add eggs & sour cream mix
  • Bake 30 min in 2 cake pans / or toothpick comes out dry
  • Bake 60 min in tube pan / or toothpick comes out dry
  • Cool 5 min / remove from pan
  • Cool on rack
  • Freezes well



cream cheese icing


ingredients

  • 3 oz of cream cheese / soften
  • 2 1/2 cups sifted 10X sugar
  • 2 tsps milk
  • 1/2 tsp vanilla

instructions

  • Blend cream cheese & vanilla
  • Gradually add sugar / mix
  • Add enough milk for spreading
  • Covers cake of 2 - 9" or 1 tube pan

This icing can be changed to a color of your choice by adding 1/4 - 1/2 tsp food coloring to the batter.




buttercream bakery icing


ingredients

  • 1/2 lb butter / margarine / softened
  • 1/2 cup plus 2 tbsps solid vegetable shortening
  • 14 oz sweetened condensed milk
  • 1 cup 10X sugar
  • 1 tsp vanilla

instructions

  • In mixer, beat butter until smooth
  • On high speed, add shortening
  • Add condensed milk
  • Add sugar & vanilla
  • Beat until light & fluffy
  • Makes 3 1/2 cups / freezes
