super ziti, seafood fantasy, shrimp cocktail, scampi, crab cakes







super duper ziti

ingredients

  • 1/2 lb cooked salmon
  • 1 lb cooked shrimp
  • 8 oz can sliced mushrooms
  • 6 oz frozen asst pepper strips / or fresh
  • 3/4 cup of olive oil
  • 4 tsp jar minced garlic / 6 cloves minced
  • artichoke hearts / optional
  • salt & pepper to taste
  • 4 tbsps butter / margarine
  • 3/4 lb cooked Ziti

instructions

  • In pre-heated pan saute garlic & mushrooms in olive oil until tan
  • Add salt & pepper to taste
  • Add salmon, shrimp and pepper strips
  • Heat about 5 minutes
  • Pour over cooked Ziti
  • Stir butter into cooked Ziti before adding other ingredients


seafood fantasy

ingredients

  • 3/4 lb cooked shrimp
  • 1/2 lb cooked salmon
  • 1/2 lb scallops
  • 4 tbsps butter / margarine
  • small onion finely chopped
  • 4 oz can mushrooms
  • 1/4 cup grated swiss / cheddar cheese
  • 2 tbsps grated parmesan cheese
  • 3 tbsps flour
  • 1 1/4 cups milk
  • 2 cups of rice
  • Salt & pepper to taste

instructions

  • Cook rice
  • Saute scallops in butter / remove from pan
  • Saute onions & mushrooms in same pan
  • Add flour / stir until smooth
  • Season to taste
  • Gradually add milk / stir until mixture thickens
  • Add shrimp, scallops, salmon and both cheeses
  • Stir until cheese melts
  • Pour over hot rice
  • Serves 4 or 5 adults

shrimp cocktail


Shrimp can be cooked with the shells on, then the shell can be removed, the back split and the black vein taken out. You can also remove the shells prior to cooking, split the back and remove the small black vein. It's all a matter of preference.

ingredients

  • 1 lb size 31 - 40 shrimp or larger
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp red pepper
  • Jar cocktail sauce / mix catsup with horseradish
  • Fresh lemon slices

instructions

  • Boil water to cover shrimp
  • Add salt, pepper & lemon juice
  • Add shrimp to boiled water / cook 3 min / shrimp turn pink
  • Chill / serve with sauce & slice of lemon

Scampi is a favorite among seafood lovers. It is easy to prepare and can be served over pasta or rice. Along with a salad it makes a great dinner.

ingredients

  • 1 lb raw shrimp peeled and deveined
  • 3/4 cup olive oil
  • 4 tsps jar minced garlic / 3 cloves minced
  • 2 tbsps dehydrated cut chives
  • Salt & pepper to taste
  • 1 lb spaghetti, fettucini or 2 cups cooked rice
  • Parmesan cheese

instructions

  • Medium heat saute garlic in olive oil until tan
  • Add raw shrimp, chives, salt & pepper
  • Cook until shrimp is pink / about 3 min
  • Serve over pasta or rice
  • Sprinkle with cheese



Once in a while we all have to splurge. Crab cakes for the seafood lover is a great way to go. There are many ways to make this delicacy but the following is my favorite.

ingredients

  • 1 lb large lump or backfin crabmeat
  • 1 tbsp finely diced onion
  • 1/8 tsp cayenne pepper
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Mayonnaise
  • Seasoned bread crumbs
  • Pam spray

instructions

  • Spray frying pan with Pam
  • Remove shells from crabmeat
  • Add onion, red & black pepper, salt and lemon juice
  • Toss lightly to mix
  • Add enough mayonnaise to barely hold together
  • Make 8 small or 4 large cakes
  • Dip very lightly in bread crumbs
  • Saute a few minutes on each side
