ingredients
- 3/4 lb cooked shrimp
- 1/2 lb cooked salmon
- 1/2 lb scallops
- 4 tbsps butter / margarine
- small onion finely chopped
- 4 oz can mushrooms
- 1/4 cup grated swiss / cheddar cheese
- 2 tbsps grated parmesan cheese
- 3 tbsps flour
- 1 1/4 cups milk
- 2 cups of rice
- Salt & pepper to taste

instructions
- Cook rice
- Saute scallops in butter / remove from pan
- Saute onions & mushrooms in same pan
- Add flour / stir until smooth
- Season to taste
- Gradually add milk / stir until mixture thickens
- Add shrimp, scallops, salmon and both cheeses
- Stir until cheese melts
- Pour over hot rice
- Serves 4 or 5 adults
