Here is the recipe for the Finnish Coffee Bread if you don't have a bread machine.. Let me know if you have any questions about this... But be careful.. This is also very addicting!! :-)
Finnish Coffee Bread 2
Ingredients:
3 packages of dry yeast
3/4 cups of warm water
2 1/4 cups of warm milk
1 1/2 cups of sugar
1 1/2 tsp salt
6 eggs
5 tsp ground cardamom
1 1/2 cups of butter, melted
10 cups of flour, approximately
Directions:
In a large bowl, combine yeast and water and let it stand for about 5 minutes.. You may add a teaspoon of sugar to this mixture..
Then, add warm milk, sugar, salt, eggs, cardamom and 6 cups of flour.. Beat until smooth..
Add melted butter and mix well...
Gradually stir in 2 more cups of flour while mixing... Add one or two more cups of flour until dough is not sticky...
Place dough on a wooden board and knead for ten minutes... Then put dough in a greased bowl.. Cover it with a cloth, set it in a warm place ( about 75 to 85 degrees ) and let it rise until it is doubled in size.. ( approximately 1 1/2 to 2 hours.. )
Then remove from bowl and gently knead the dough to remove the air bubbles.. Then cut dough into 5 even pieces... ( Each piece will make one loaf..) Then cut each piece into three strips.. Take the 3 strips from each loaf and braid them...
Then place braided dough on greased cookie sheets and cover them with a cloth.. Let them rise again in a warm place for approximately 30 minutes...
While dough is rising, preheat oven to 350 degrees.. When dough is finished rising, put them in the oven and bake for 1/2 hour or until golden brown...
Take bread out of the oven and while they are still hot, brush immediately with sugar glaze.. ( 1/2 hot coffee and 1/2 sugar, mixed )
Then sprinkle with sugar on top of hot glaze..
