Apricot Chicken a la Gray-Leckrone

2 skinless, boneless chicken breasts
1 1/2 cups apricot nectar
1 cup water
1 small or 1/2 large onion
1 pkg Good Season's Garlic and Herb Dressing mix

Combine all ingredients in a baking dish. Bake at 350 degrees F for 1 hour or until done. Serves 2.

Apricot Chicken Original

2 chicken breasts, skinned
1/2 cup flour
1 tsp pepper
1 1/2 cups apricot nectar
1 cup water
1 Tbspn Russian dressing

Combine flour and pepper in a large zip-loc bag. Add chicken breasts and shake to coat. Combine water, apricot nectar, and russian dressing in baking dish. Add chicken. Bake at 350 degrees F for 1 hour or until done. Serves 2.

We love this dish both ways. I developed the "other" version because it's quicker and because we don't like the Russian dressing by itself, so there's no reason to keep it around.

I usually serve this with brown rice or rotini noodles and salad.
