Mom's Corn Bread

This is my mother's recipe for corn bread. It's a less sweet version than ones you will often find, and it's a real crowd-pleaser.

1 c flour
3/4 c corn meal
1/3 c sugar
3 t baking powder
3/4 t salt
1 egg
1 c milk (buttermilk even better)
2 T melted butter or margarine (I use canola oil)

Sift flour, corn meal, sugar, baking powder, and salt. Add milk, egg, and melted shortening (or oil). Mix well. Pour in greased pie plate or 8" square baking dish. Bake at 425 degrees F for 20 minutes or until done. (I spray the top with vegetable oil cooking spray so it browns.)
