THE STUDENT NURSES' COOKBOOK

Most people eat to live, but nursing students live to eat! Next to spring, summer,and winter breaks, eating is probably the favorite activity of most student nurses (OK, the second favorite activity!)

Maybe it's the stress thing that causes us to reach for the nearest munchie or to raid the snack machine for M & M's or Almond Joys after enduring a 2 hour nutrition class. Maybe it's because we need to replenish the energy stores expended in pulling an all-nighter before that A & P final.

Soooooo....

What I'm looking for here is your favorite recipes -- you know, the casserole you knock together in the 10 minutes you have left before you head out for clinical, the inexpensive quickie meals your family has become accustomed to, the snacks you and your classmates can't get enough of when you bring 'em in. (Newsflash: Man does not live by pizza or Mickey D's alone.).

C'mon, you've got a recipe that you'd like to share with your fellow SNs. Send it in -- never underestimate the appetite of a hungry student nurse!

PS: Heavy duty Reynolds Wrap -- it's a godsend for lining baking pans.

I call this one "puke" because it kind of looks like it but it sure doesn't taste like it!! Nursing students should be used to it anyway!! Makes a great filling snack and I've even eaten the whole thing for dinner. VERY quick, easy and awesome!

1 8 oz. package of cream cheese (low fat tastes the same)
1 can of Hormel Chili
1 cup grated cheddar cheese
1 bag of Tostitos

Spread the cream cheese in the bottom of a square baking dish (9x9). Pour the can of beans on top of the cream cheese. Sprinkle desired amount of cheddar cheese on top of the beans. Cover and microwave on high for 3 minutes and dig in!!!

Here is on of my favorites that is simple and fast.

It"s called white bean chili, but its more like a bean soup if you ask me.

  • 1 jar of northern white beans (they are already cooked this way)
  • 1 can of chicken (you can use any chicken, doesn't need to be in a can)
  • 1 sweet onion (diced)
  • pepper (to your taste)
  • cayenne pepper (careful here) :)
  • garlic salt (again to your taste)
  • 1 Large can of chicken broth
  • 1 jar of salsa (optional, but very good)

Add all ingredients into a big pot and let simmer! Great with easy bake biscuits.

OK, your very truly will get things started with my "Better Than Sex" chocolate pretzels.

1 lb. pretzels (I like the hard sourdough variety)
1 lb. candymaking chocolate (They come in buttons the size of a quarter)
Sprinkles, finely chopped nuts, coconut flakes (optional)

Melt and stir the chocolate in the top of a double boiler or in a microwave (check and stir Q minute or so) till completely melted. Dip the pretzels in the chocolate, pull them out with tongs, and place on cookie sheets lined with aluminum foil or waxed paper. Sprinkle sprinkles or whatever as desired. Place in freezer until chocolate is dry (not shiny). Remove with tongs or covered hands (using bare hands will leave fingerprints!) Get ready for the snack experience of a lifetime! Good for PMS, all night study sessions, post-breakup blues, or whatever ails you.

You can find candymaking chocolate in most craft shops -- white, milk, dark (my favorite) -- even colors. Figure on a pound of chocolate, more or less, to a pound of pretzels (depending on the type of pretzels you use).
