* Exported from MasterCook * Chicken Vegetable Soup Recipe By :Richard Simmons Serving Size : 2 Preparation Time :0:00 Categories : Foodmover Soup Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces chicken breast 1 tablespoon flour 1 tablespoon olive oil 1 tablespoon chopped garlic 1 stalk celery -- cut 1" thick 1/4 cup mushrooms -- sliced 1/4 cup parsnips -- diced 8 ounces California Blend vegetable mix -- 1/2 bag frozen 1/4 teaspoon thyme 2 tablespoons fresh parsley -- chopped 1 teaspoon garlic powder 10 ounces chicken broth 1/4 teaspoon salt 1/4 teaspoon fresh ground black pepper 1. Dredge chicken in flour and sauté in 1 tablespoon oil in a soup pan for 3 minutes and set aside. 2. Add minced garlic and onion and brown 2 minutes; add celery, mushrooms, parsnips, chicken, and broth and bring to a boil. 3. Add frozen vegetables, thyme, parsley, salt & pepper. Simmer for 5 minutes, then serve.
