* Exported from MasterCook * Italian Chicken Stew Recipe By : Richard Simmons and Friends "Never Give Up" Newsletter 3/99 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil 1 medium onion -- thinly sliced 2 teaspoons minced garlic 1 cup low sodium chicken broth -- fat free 1 pound carrots -- cut 1" thick 2 cans white kidney beans -- drained and rinsed, or 4 cups cooked 1 teaspoon dried sage 1 teaspoon dried thyme 1/2 teaspoon salt and pepper -- each 1 1/3 pounds chicken thighs -- 4 pieces total 1/2 cup fresh parsley -- chopped In a large non-stick skillet, heat the onions and garlic in the olive oil and stir, cook 5 minutes or until tender. Stir in the broth, carrots, beans, thyme and sage, salt & pepper, and bring to a boil. Arrange the chicken on top, cover, and simmer 10 minutes. Turn the chicken pieces over and simmer uncovered for 10 - 15 minutes, stirring occasionally, until the chicken is cooked thoroughly and carrots are tender. Remove from heat, and sprinkle parsley on top prior to serving.
