* Exported from MasterCook * Lightning-Quick Lasagna Recipe By :Richard Simmons Serving Size : 8 Preparation Time :0:00 Categories : Italian Main Dishes Simmons & Friends Newsletter Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 30 ounces nonfat ricotta cheese -- 2, 15-oz containers 1/4 cup grated parmesan cheese -- divided 1 large egg 26 ounces spaghetti sauce -- nonfat, divided 9 no-boil lasagna noodles -- divided 2 1/2 cups nonfat mozzarella cheese -- shredded 1. Heat the oven to 375 degrees F. 2. In a large bowl, combine the ricotta, 2 tablespoons of the Parmesan cheese, and the egg. 3. In a 13" x 9" baking disk, spread 3/4 cup of the sauce. 4. Top with 3 noodles, then 1/2 of the ricotta mixture, and 1 cup of the mozzarella cheese. 5. Repeat all the layers (sauce, noodles, ricotta mixture, mozzarella), then top with the remaining noodles and sauce. 6. Sprinkle with the remaining mozzarella and Parmesan cheeses. 7. Cover with foil and bake for 40 minutes. 8. Remove the foil and bake for 10 minutes longer, until the noodles are tender. 9. Let stand for 10 minutes before serving.
