* Exported from MasterCook * Gonzales Chicken Jambalaya Recipe By :Richard Simmons Serving Size : 6 Preparation Time :0:10 Categories : Farewell To Fat Cookbook Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- non-stick cooking spray 1/4 pound turkey light meat, skinless -- sausage links 1 can chicken broth -- fat free & low sodium 8 ounces chicken breast halves without skin -- diced 4 ounces Black fForest ham -- diced 1 cup onion -- chopped 1 cup green bell pepper -- chopped 1/3 cup celery -- chopped 1/3 cup green onion -- chopped 2 cloves garlic -- chopped 15 ounces canned tomato wedges -- cut up 1/4 cup worcestershire sauce 2 teaspoons hot pepper sauce -- to taste 2 teaspoons dried thyme salt and pepper -- 1/8 teaspoon each 2 tablespoons fresh parsley 1 1/2 cups rice -- uncooked white rice Coat a large Dutch oven with cooking spray. Heat over medium-high heat. Add sausage. Brown thoroughly, 2-3 minutes. Remove. Halve sausagees lengthwise, then thinly sliced crosswose. Return to hot pan. Stir, adding a splash of chicken broth to prevent sausage from sticking and over-browning. Add chicken. Cook, stirring frequently, 2 minutes or until lightly browned, ading more chicken broth as needed to prevent sticking and over-browning. Add ham. Cook, stirring, 1 more minute. Remove meats. Set aside. Add splash of chicken broth to pan, stirring up any brown bits from bottom. Add onion, green pepper, celery, green onion, and garlic. Cook, stirring, over high heat until softened, 2-3 minutes. Add broth as needed to prevent sticking and over-browning. Add tomatoes and remaining chicken broth. Add all remaining ingredients except for rice. Cover. Reduce heat to low. Simmer 25 minutes. Meanwhile, in a medium saucepan cook rice according to package directions. Stir rice into chicken mixture. Heat through. Serve in shallow bowls.
