* Exported from MasterCook * Lentil Vegetable Soup Recipe By :Mercedes G. from Queens, NY Serving Size : 6 Preparation Time :0:00 Categories : Low-Cal Soup Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Toss together in a large soup pot: 1 cup lentils 1 bay leaf 1 small chopped onion 7 cups boiling water Saute together in a skillet for 10 minutes: 2 tablespoons olive oil 2 medium carrots 2 stalks celery 1 cup sliced mushrooms 1 medium bell pepper Extras lemon juice salt and pepper -- to taste Garnishes sour cream -- fat free sliced tomatoes 1. Add first group of ingredients to soup pot and heat to boiling. Lower heat and simmer 45 minutes. 2. While soup simmers, saute the second set of ingredients. Add to soup just before serving. 3. Add salt & pepper and lemon juice to taste. Serve, adding optional garnish, if desired.
