Sprouting Sunflower Seeds

Half fill a bowl with water and pour two heaped tablespoons of [shelled] seeds into it. Throw away any seeds that rise to thr surface, then pour off the water, tipping the remaining seeds into a sieve. Hold the seive under the tap and rinse the seeds thoroughly.

Pour the rinsed seeds into a large, clean, clear glass jar and cover with cold water. Leave to stand overnight.

Next morning fix a piece of gauze over the top of the jar and secure with an elastic band. Carefully pour away the water through the gauze, refill the jar with fresh water, shake, then pour this away too.

Leave the jar resting on its side until the seeds have sprouted, repeating the rinsing procedure at least twice daily, checking for any bad seeds as you do so. Any that look moldly or are floating should be discarded. It takes 8-10 days for sunflower seeds to sprout. Once sprouted, the seeds can be stored in a polythene bag in the fridge for a couple of days.
