Pale Ale 9/7/99 21L 1 can Goldrush Pale Ale, 1kg dextrose A nice beer for a first attempt. Drank most of it before it was ready, but I was so keen to try my first hand made beer. Very simple brew for a beginner.
Stout 30/7/99 21L 1 can Goldrush Stout, 1kg liquid malt Not as good as the dark ale which followed but a nice effort at my first dark beer. Good for a cold night watching telly.
Dark Ale 13/8/99 21L 1 can Coopers Dark Ale, 1kg body brew (600gm dextrose, 400gm maltodextrin) A nice beer. We drank most of these on Friday night football nights. Probably the beer that really got me interested in making good beer, rather than just saving a dollar.
Draught 21/8/99 21L 1 can Coopers Draught, 1kg brew booster (500gm dextrose, 250gm maltodextrin, 250gm light malt) A good beer for those who don't like complex beer. Good to chug a lot on those big cheap nights. But nothing too special.
Munich Lager 16/9/99 21L 1 can Wander Munich Lager, 1kg brew booster This was a really good beer. Lots of malt, very smooth and crystal clear gold colour.
Draught 6/10/99 21L 1 can Coopers Draught, 1kg dextrose My first real failure. Bottled most of it in 375ml crown lager bottles for summer. Mustn't have added enough sugar, these babies were flat.
Real Ale 21/11/99 21L 1 can Coopers Real Ale, 1kg brew booster Got a bit lazy by now. Had some off flavours in this beer, but it was still drinkable. We only drank these ones on big nights.
Ultra Brew 6/3/00 21L 1 can Coopers Draught, 1kg brew booster, 1kg dextrose, 12gm saaz hops (dry hop) This beer packed a mean punch. Turned out being about 9% alcohol. We drank these when we wanted to get charged before heading out on the town.
Grape Lager 12/3/00 21L 1 can Coopers Lager, 1kg brew booster, 1kg red grapes, 12gm goldings hops (quick boil) Tried something different with this one. Wasn't the best beer. Turned out a little tart if anything. Cherries might be a better addition.
Kilkenny 7/4/00 21L 1 can Goldrush St Arnou Ale, 1kg powdered malt, 12gm goldings hops (quick boil), 12gm pride of ringwood hops (dry hop) First attempt at following a recipe for cloning a commercial beer. Was very good. Nice and malty, with good head.
Nut Brown Ale 27/6/00 21L 1 can Coopers Nut Brown Ale, 1kg stout combo (500gm dark malt, 250gm light malt, 250gm maltodextrin), 250gm dark crystal (steeped for 20 mins then boiled) Very nice beer. Strong roast and nutty flavours but at the same time smooth and nice to drink.
Ginger Beer 12/7/00 22L 1 can JAL Ginger Beer, 1kg body brew The flavour in this was just like Bundaberg Ginger Beer in the brown glass bottles. Except this was alcoholic. There was a disturbing amount of slime in the bottom of the bottles, but it didn't affect the taste.
Super Stout 17/7/00 14L 1 can Coopers Stout, 1kg Capilano honey, 500gm dextrose Not a good beer. Too thick for my liking. Was the beer we turned to when everything had run out. Right before we hit the light beer left over in my stepdad's fridge.
Pilsener 6/9/00 21L 1 can Brewiser Pilsener, 1kg body brew, 12gm saaz hops (dry hop) First beer I put into the keg. If I knew how to keg properly I'd have gotten a few more glasses out of this one. I loved the spicy flavour and aroma of the saaz hops.
Extra Dry 21/9/00 22L 1 can Goldrush Country New, 1kg body brew, 12.5ml yeast enzyme (5 days into ferment) Second brew i put into a keg. Very nice beer. The yeast enzyme helps the yeast to work harder for longer leaving less sugars in the beer and making it drier than the standard beer. Creates a crisp beer with a bit of bite.
Malt Pale Ale 12/10/00 22L 1 can Goldrush Pale Ale, 1kg light powdered malt, 12gm cluster hops (quick boil) Nice pale ale with a bit of body to it. The clusters added a bit of character too.
Explorers Ale 2/3/01 22L 1 can Goldrush Explorers Ale, 1kg brew booster Not a bad beer. We knocked this one off at a party in one night. Had a nice bitter bite to it which would be good on a hot summer day.
Diggers Bitter 3/4/01 18L 1 can Goldrush Diggers Bitter, 1kg body brew, 1 tbspn Vegemite A nice darker looking beer. Pretty good for the style, though I'm not sure how much effect the vegemite had.
Malt Munich Lager 21/5/01 22L 1 can Brigalow Munich Lager, 1kg stout combo Made this one for a snow trip. My friends all took commercial stuff, so I kept this smooth full bodied beer to myself. And I enjoyed it in the cold air of Jindabyne.
Kilkenny 28/5/01 21L 1 can Goldrush St Arnou Ale, 1kg powdered malt, 12gm goldings hops (quick boil), 12gm pride of Ringwood hops (dry hop) The second Kilkenny clone I made. Put this one into the keg and had 6 bottles leftover which I drank about a year after bottling. Very good immitation of the classic Irish beer.
Dutch Lager 9/7/01 22L 1 can Goldrush Australian Lager, 1kg powdered malt, 500gm dextrose, 12gm halertau hops (quick boil), 12gm halertau hops (dry hop) This beer tasted a lot like commercial Dutch lagers. A bit higher alcohol content made this one good for our big nights.
Stockmans Draught 7/11/01 22L 1 can Morgans Stockmans Draught, 1kg brew booster, CL80 hops (quickboil) A great bitter draught beer that I put into the keg for the hot summer afternoons. Easy to drink plenty of these in the backyard listening to the last session of the days play in a cricket test match.
Scottish Heavy Ale 15/11/01 17L 1 can Muntons Scottish Style Heavy Ale, 1kg light liquid malt Only brewing 17L gave this heavy ale even more body. Was great for the cold winter nights at home.
Stockmans Draught 2/12/01 22L 1 can Morgans Stockmans Draught, 1kg brew booster, cascade hops (quickboil) Even more bite than the first Stockmans I made due to the change from the mild CL80 hops to the cascade. Great for those hot days when you get home from a hard days work, put your feet up and crack a cold beer.
NZ Draught 28/3/02 22L 1 can Black Rock NZ Draught, 1kg brew booster If you like Steinlager, you'll like this beer. It almost made me feel like playing some Rugby Union and hanging out with sheep.
Eureka Pale Ale 28/3/02 18L 1 can Rebellion Eureka Pale Ale, 1kg brew booster This brew was a good pale ale. Had a nice flavour and head, and the little bit smaller batch size added a bit to body.
Apple Cider 10/6/02 18L 1 can Brigalow Apple Cider, 1kg dextrose A nice drop for those who don't like the taste of beer. Crystal clear and fairly refreshing.
Canadian Blonde 9/8/02 20L 1 can Coopers Canadian Blonde, 1kg brew booster I always wanted to taste a blonde Canadian, but this wasn't quite what I had in mind. Still, a pretty good alternative. Very light colour and wheat beer flavour.
Canadian Blonde 26/11/02 22L 1 can Coopers Canadian Blonde, 1kg brew booster Blondes have a distinctly light colour and wheat beer flavour. This was another really good Canadian beer.
Ginger Beer 27/11/02 22L 1 can Brigalow Ginger Beer, 1kg dextrose Bulk primed this one and it came out with a lot less sediment in the bottles. Plus the missus liked it too.
Josh's Winter Beer 17/12/02 22L 1 can Muntons Yorkshire Bitter, 1kg light liquid malt, 250gm dark crystal grain (steepd for 20 mins), 12gm fuggles hops (boiled with dark crystal malt liquid), 12gm fuggles hops (dry hop) This was a fantastic beer in the cold winter months. Had a great body with a nice creamy head. Finished off with a slightly roasted flavour from the dark grain. Not everyone's cup of tea though.
Josh's Pale Ale 26/5/03 22L 1 can Morgans Blue Mountain Lager (ale yeast), 1kg powdered light malt, 12gm goldings hops (boil with malt for 20 mins), 12gm goldings hops (dry hop) My fermenter leaked on the ground while in the fermenter. I only lost about 500ml but it made quite a mess. Ensure your tap is securely fitted to the fermenter. Was a good tasting beer.
English Ordinary Ale 10/7/03 22L 1 can Wander Munich Lager, 1kg powdered light malt, 12gm saaz hops (all boiled for 60 mins), 12gm saaz hops (dry hop) This beer smelt bad and tasted worse. Had a DMS (Dimethyl Sulfide) problem. I believe the boil wasn't strong enough. I will ensure a solid rolling boil in the future.Scored 53.5/150 in the 2003 NSW Homebrewing Championships. But the colour looked great and I'll be trying to make another sometime.
American Pale Ale 16/8/03 22L 1 can Goldrush Polar Beer, 1kg body brew, 40gm pale chocolate malt 900EBC, 30gm fuggles hops (dry hop) This beer has a real hoppy aroma. I wanted to enter it in a competition but ran out of bottles.
Daniel's Coldie 16/8/03 22L 1 can Goldrush Palerider Wheat Beer, 1kg brew booster, 12gm cascade hops (quick boil) I had to bottle this early as a friend was travelling 3 hours to brew and I needed a fermenter, so we bottled this with half the sugar and a SG of 1.018. Daniel reported that some of his beers gushed out when opened, but the last few we drank were pretty good. If you make the same mistake, let them settle down a bit in the fridge for a while first.
Smooth Old 8/10/03 22L 1 can Coopers Old Ale, 500gm dextrose, 500gm plain honey, 100gm light crystal grain steeped 15 mins. 5gm Willamette hops dry hopped into secondary fermenter 7 days after primary. This beer was really nice. A Tooheys Old drinker enjoyed many glass of this smooth old ale. I should make him some more one day.
Wheat Beer 30/12/03 23L 1 can Morgans Golden Sheaf Wheat, 1kg dextrose, Safale K97 wheat beer yeast. Fermented in bath tub with ice bottles to keep cool in the Summer. Refreshing beer for the Summer. The cooler fermentation stopped the wheat beer yeast from producing too many banana esters.
Daniel's Wheat Beer 8/1/04 23L 1 can Blackrock Whispering Wheat, 1kg body brew, Safale K97 wheat beer yeast from starter. Also fermented using the ice bath trick to keep fermentation temps down in the Summer. Daniel liked this beer, but not as much as his coldie made from Goldrush Palerider wheat beer.
Special Lager 8/1/04 23L 1 can Tooheys Special Lager, 1kg body brew, yeast from 3 extract cans, 10gm willamette hops dry hopped. This beer was uneventful but nice enough to drink with the mates in the backyard.
Extract IPA 13/3/04 23L 3.6kg dry malt extract, 100gm dark crystal malt, 40gm chocolate malt steeped 20 mins, 30gm POR 10% 90mins, 20gm Goldings 5% 15mins, 20gm Goldings 5% 1min, Coopers Sparkling Ale yeast in a starter, 16gm fuggles dry after 7 days in primary fermenter. OG 1.052 FG 1.013, 110gm sugar for priming. Malty and hoppy IPA. Could have done with even more late hop additions. But not a bad attempt at a full boil beer.
Bavarian Lager 18/4/04 24L 1 can Coopers Bavarian Lager, 1kg body brew, WLP802 Czech Budejovice lager yeast, 15gm halertau in bowl with some extract and boiling water 15mins. Smooth malty beer. Good beer to start trying out different yeast.
Daniel's Wheat Beer 2 5/6/04 23L Coopers Wheat Beer, 1kg brew booster, safale K97 wheat beer yeast from starter. OG 1.054 FG 1.014 abv5.4% Another refreshing one of Daniel's wheat beers. This one was a little sweeter than the others and could have done with some finishing hops.
ESB Wheat 28/6/04 23L 1 can ESB Wheat beer, 1kg Morgans master Blend wheat malt, fermented on yeast cake of Daniels Wheat Beer 2 Safale K97. OG 1.038 Bit dark for my liking. This is either due to the ESB giving a darker wheat beer, or more likely the 1kg of Morgans liquid wheat malt being darker than a matodextrin, dextrose, dry malt blend. Still, the boys from my soccer team finished it off in no time at all.
Coopers Pale Ale 19/7/04 23L 1 can Coopers Original Australian Pale Ale, Coopers brew enhancer 2 1kg, Ale yeast from can OG 1.038. Very pale and slightly hazy just like the tap Coopers version. Lacks some of the body and flavour, but not a bad kit impression of the original.

India Pale Ale 15/8/03 23L 4kg pale ale malt, 1.5kg munich malt, 50gm chocolate malt. 60 mins mash @ 66C, 60 mins sparge @ 75C. 36gm cascade hops 6.5% 90 mins boil, 24gm fuggles hops 5% 90 mins, 12gm goldings hops 4.2% 5 mins. White labs English Pale Ale yeast pitchable tube in starter. Irish moss pellet 15 mins boil. My first all grain batch of beer. In the brew name column, ag signifies all grain. This beer scored 113.5/150 in the Strong Ale class in the 2003 NSW Homebrew Championships which is a pretty good score for a first effort at all grain brewing. I was very happy with how this beer turned out.
