""Egg sizes"" include jumbo, extra large, large, medium and small. Correct size can be important in recipes with exacting measurement requirements, like cakes. Differences in size, shell and yolk color have no effect on quality.

""Egg grading"" takes into account the quality and appearance of the egg. Nutritional content is the same with all grades. Grade AA is the best from an appearance standpoint, particularly for poached, fried and deviled eggs, because the yolk is round and evenly centered and the white is thick and firm. Grade A is another excellent choice, although the white may be a little thinner and the yolk may be off center. Grade B has a flatter yolk, but is excellent for baking. Grade C, acceptable only for baking purposes, is seldom available in markets.

""How To Hard boil eggs without cracking them"" Use fresh eggs, preferably organic or grain fed, as they peel more easily once cooked. They also have better texture and flavor. Handle like eggs. Or nitroglycerin. Bring eggs to room temperature before cooking. This helps prevent cracking due to the sudden shock of temperature change and ensures a properly cooked egg. If you do use eggs right out of the refrigerator, add a minute or two to the cooking time. Simmer eggs. A roiling boil is too violent. Call them "hard cooked" instead of "hard boiled" and you'll remember this hint. Don't crowd the pan. The eggs will knock each other and crack. In a saucepan, bring enough water to cover the eggs to a boil. With a slotted spoon, lower the eggs into the water. Quickly, bring the water back to a boil. Lower the temperature to medium heat and simmer exactly 10 minutes. Remove the eggs with a slotted spoon and plunge into a bowl of cold tap water. The cold water will stop further cooking and create a gap between shell and egg for easier peeling.

Hard Boiled Eggs are easy to peel if you let them sit in the pan with the lid on after boiling for about 5 minutes. Steam will build up under the shells and they will be a snap to peel.

The less tender beef cuts are usually from the chuck, the brisket, the short plate, the flank, and the round. These are less expensive and should be slow-cooked or marinated so that they'll be tender enough to practically melt in your mouth, just like the cuts that are naturally tender. The blade and bottom round steaks are not very tender when cooked as steaks but can be made tender when cooked in a little liquid, braising them. Familiar cuts include flank, cubed, top round, round, and bottom round steaks. The most tender and juiciest steaks should be cut at least one inch thick. Steaks that have a nice marbling running through them will be more tender and flavorful than very lean steaks. It's the marbling that makes them juicy. Steaks should always be cooked on a high heat, searing the outsides to keep in their natural juices. To prevent a steak from becoming tough and dry, don't overcook it. There's a very fine line between well-done and dry, so if you prefer your steak well-done, watch it carefully! The citric acid in Coke removes stains from vitreous China.   To remove rust spots from chrome car bumpers:   Rub the bumper with a crumpled-up piece of Reynolds Wrap aluminum foil dipped in Coca-Cola.   To clean corrosion from car battery terminals:   Pour a can of carbonated Coca-Cola over the terminals to bubble away the corrosion.   To loosen a rusted bolt:   Applying a cloth soaked in a carbonated soda to the rusted bolt for several minutes.   To bake a moist ham: Empty a can of Coca-Cola into the baking pan, wrap the ham in aluminum foil, and bake. Thirty minutes before the ham is finished, remove the foil, allowing the drippings to mix with the Coke for a sumptuous brown gravy.   To remove grease from clothes:   Empty a can of Coke into a load of greasy work clothes, add detergent, and run through a regular wash cycle.
