Chocolate Bourbons

 

Ingredients:

1/2 cup  plain flour
1/8 cup cornflour
1/8 cup cocoa powder
3/8 cup caster sugar
3/8 cup margarine
few drops of milk

1/4 cup butter
3 cup icing sugar
1 tbsp drinking chocolate powder

a couple of drops of warm water

Direction:

Cream together the margarine and sugar, then sift and add the flours and cocoa powder, and mix well. You may need to add a little milk so that the mixture just binds together.

Roll out the dough to about 1/8" thick. Cut out shapes using a cookie cutter, or cut into even sized rectangles using a pastry wheel.

Place on a greased baking sheet and bake at 190C for 10 mins. Leave to cool.

Meanwhile, to make the filling, cream the butter, then add the icing sugar, drinking chocolate and the warm water. Sandwich together pairs of biscuits in this way.
