Recipes for Liver:

Appetizer:
Traditional Jewish Chopped Liver

(Prepare night before)

1 lb. beef liver
3 med. onions, diced
3 hard boiled eggs
1/2 tsp. salt
1 tbsp. Mayonnaise
1 tbsp. Oil (use only if needed to keep moist)

1. Slice liver into 2 inch cubes.
2. Saute onions in oil until transparent.
3. Drain and remove onions to bowl.
4. Fry liver in same pan, stirring frequently, until fully cooked (about 10 minutes).
5. Remove liver to bowl with onions; mix thoroughly and refrigerate overnight.

6. In a meat grinder or food processor, add liver, onions and 3 eggs; grind until smooth paste.
7. Add mayonnaise and salt to taste; mix well.
8. Serve with mini rye breads or crackers.
9. Garnish with radishes or tomato wedges.

Liver in Orange Glazed Sauce

Ingredients... Instructions...

  1. Mix the flour, paprika, ground bay leaf, salt and pepper together on a plate. Lightly coat the liver in the flour.

  2. Heat the oil in a frying pan until very hot and add the liver in a single layer. Cook for 20-30 seconds before turning over.Add a shake of worcestershire sauce and the orange juice and then fry for 20-30 seconds more.

  3. Serve with a little of the sauce. The liver should be just pink in the middle.
