Recipe Ingredients
2 lbs. Catfish, red snapper, or cod
1/3 cup chopped green pepper
2 tbs. Snipped parsley
1 tbs. Lemon juice
½ tsp. Salt
½ tsp. Ground red pepper
1 med. onion, chopped
1 clove garlic crushed
1 can (28 oz) whole tomatoes
3 cups hot cooked rice





Recipe Directions
Heat oven to 450 deg. Place fish fillets in ungreased
baking dish 11x7x1 1/8". Mix remaining ingredients
except rice, break up tomatoes. Pour over fish.
Bake uncovered, spooning tomato mixture over fish
occasionally, until fish flakes easily with fork,
25 to 30 minutes.
